Of course, this chef is fascinating, with a strong kitchen knowledge base, and good control of his seasonings, he knows his way around a kitchen. And I noticed he keeps a very clean work area, as well. My problem is trying to learn his recipes. I do not understand what the seasonings are, nor amounts. Is there a way to translate? Thank you. Very impressive presentation. I am an English cook and very much want to learn.
Louisiana crawfish: 1500g Onion: half, around 40g, shred Bunching onion/long green onion: 2, cut into small sections Ginger: 40g, sliced Spicy hotpot base: 50g, diced Green Sichuan pepper: a few Dried chillies: a few (depends on how spicy you want it to be)

You can turn on English subtitles on some of his videos but not all. I wish he had them on this video as I live in Louisiana and I want to prepare crawfish this way for my cajun friends. The only thing that threw me off was the hot pot soup base but it makes sense now.
Crawfish are about to be in season here in America and I can’t wait to try this recipe.

Do you mean salt or freshwater ones? These here are sourced from rivers and swamps, but of course you could try applying the recipe to saltwater crayfish. I am curious how well it fits.
