How is it that when in the first example Cu is the oxidized element, when Cu goes from 0 to +2. Correct if wrong, but Oxidized means elemnt loses electrons, and reduced means gain elecrtrons. So if I were to do the equation I would have Cu as the reduction, and Ag as the oxidation. So my question is why is my thinking most likely wrong?

+Devon Reiff Oh I got it now, to get a higher oxidation state, it must lose electrons, which is oxidation, which would mean to get a lower oxidation, it must gain electrons.

Does nitrogen need to be diatomic too or is it just the oxygen?

The nitrogen will not be balanced as a diatomic, because nitrogen in the reaction is not in its elemental state. It's instead part of a compound, and has an oxidation state that changes from -3 to +4.
