You should be able to however you might want to try the recipe as is first and then make changes to the sugar added as cherry juice a lot of times has extra sugar already added so it might be too sweet. If you do so please lets us know how it goes

No they are not, they were normal sweet cherries. I would love to try sour cherries. I bet the taste is very good as well.
