We’re back with chef Chetna Makan as she makes a super simple aubergine dish with a smooth tahini yogurt.
Chetna flavours the aubergine with our new Cooks’ Ingredients Vadouvan Spice Blend. The blend offers sweet, smoky and warming flavours and is a great marinade for vegetables, fish, chicken and pork. It can also be used to add complexity to rich, creamy soups and sauces.

1 large aubergine
2 tbsp olive oil
1½ tsp Cooks’ Ingredients Vadouvan Spice Blend
For the yogurt:
200g natural yogurt
2 tbsp Cooks’ Ingredients Tahini
