Most restaurants prep things in advance that’s what fridges and freezers are for. It cuts down on costs and service time. Obviously, not all places do this, but there are plenty of recipes that are better the next day when flavors have had to time to marry.

Tom Rebman The name "Sun Wah" can be either a transliteration of either Mandarin or Cantonese. Cantonese is spoken in Hong Kong, Yes. There is also another place that speaks Cantonese. The Chinese province of Canton, where Cantonese people and food culture originated from. And Hong Kong barbecue is also originated in Canton. So, this gentleman could very well escaped communist China in the 70s, picked up the trade in Canton before moving to Chicago to start his restaurant.

Sorry but it was the worst roast duck I have ever tasted and I ate many in my 60 years. It was way too salty and without plum sauce. The rib was also bad because they used back back instead of St. Louis. I drove over 60 miles from Milwaukee for that to go and I threw it away after ate a quarter of it and I didn't like throwing food away.

Duck is dry and not air pumped properly, plum sauce is a Southern Chinese thing not every thing serve that.
