At 4 min 30 sec you can hear some beer bottles being kicked over by someone. It is common practice in Chinese restuarants to keep the empties with you and store them on the floor so as to keep track of how many bottles you and your guests have drank at your table. It keeps track of the tally and charges and keeps everyone honest [the servers and drinkers alike] when you are presented with the bill. It's hard to dispute the charges when the empties are seating around your table and feet.

urine is a waste product that is drained and cleaned when the inner organs are removed and cleaned. The internal organs are soaked in a chili spice mixture, they're not pickled in brine.

It is hard to get a real authentic Szechuan cuisine in Middle East. But one day we stumbled on a lesser known Chinese restaurant where the chef was from the Szechuan province. He came out to meet us, he asked what we would like to have. We told him to make what he do best back in his hometown. We had beef belly in oil spice, Cold Chicken, Chinese cabbage - all Szechuan style to its core. I know exactly what you mean by lip numbing experience... It was so spicy my tongue and lips felt like it was just slobbed with a good dose of topical anesthetic cream... BUT, I enjoyed it. We came back with friends and popularized his dishes, the Beijing themed restaurant finally relented to put the Chef's dishes in the menu towards the end of my tenure in the Middle East.

Trevor James, I am familiar with your reaction after you ate these spicy dish. When I treated my friends from other provinces to taste our local spicy food, they had the same expression as yours, lol~ Chillies are excellent source of Vitamin, A, B, C and E with minerals, stimulate the appetite, help to clear the lungs, and stimulate digestive system. Chillies are good for slimming down as it burns the calorie easily. As chillies are very hot, if you have a hot body constitution, it's better to eat less :)

I'm addicted to spice. Sort of a hot food junky. The Spiciest thing I've had, heat-wise, is probably a Butch T scorpion pepper stuffed with cream cheese and onion, wrapped in bacon and roasted. You can ask for a cup of water so you can brush the spicy food before you ate them . and foreigns perhaps prefer not to use or ask for that spicy mix dish , they have the sesame oil dishes (or vinegar) for your choice .
