Can confirm cheese is not heretical. My apartment is about a three minute walk from Mr. Beef (the filming location and inspiration for The Beef), and they have a provolone option for their Italian beef. It’s my go-to!

​@@archivist_of_dragonstoneyou can't go wrong with the Italian beef. The only thing you have to decide is how wet you want the bread. You definitely don't want to order it "dry" because all the flavor is in the gravy. Ordering it dipped means they dunk the entire roll into gravy. The best option (in my opinion) is somewhere in the middle.

As someone from Chicagoland, THANK YOU for bringing this sandwich to a larger audience. Has played such a large part in my upbringing and family history it hurts my heart that it isn’t common across the whole U.S.

I'm from Michigan and still live here. I would walk across ground glass in my bare feet for a decent Italian beef sandwich. They are hard to come by here.

Born and raised in Chicago and I can tell you, this is a beautiful Italian beef. It’s always best to be eaten with cheese, hot, and sweet peppers. Great job man.

You can get your beef in three options: Dry, dipped, and wet. Dipped is basically they rapidly dip each end in the jus. Wet is they put the whole sandwich in so the bread soaks up all the liquid. Dipped is the way to go.

Finally! I’ve been waiting for what feels like years for a classic style Babish with a dish being recreated from a show or a movie. I know it’s hard to get inspiration these days, but the Bear has produced a number of dishes that I’m sure will provide more ideas for episodes like this.

Also, for bread, try Turano. Turano bread trucks are pretty iconic in Chicago and their French rolls are what a lot of places use.

@@minivanmegafun I've never seen Turano outside of Chicagoland. Things like Portuguese rolls or hoagie rolls are... not the same, but close enough, especially with a bunch of gravy on them.

It’s about $16.25 per sandwich, which isn’t too extreme for a popular restaurant. Even some fast food items are around the same price, albeit for quite a bit more food

There's a Chicago pizza place called Vito and Nick's (vastly better than Pequod's, BTW) that makes their own Italian beef for their Italian beef pizza; which is spectacular. I think the process for mak8ng this is somewhere online. Order your giardiniera from J.P. Graziano's on Randolph Street; obviously get the hot.

I'm about to turn 40, and as an Illinois girl (moved 2 years ago, and have been homesick every day since), I only very recently realized this is not an American thing, but an Illinois thing. We have it in rotation constantly in our house. I don't even like a lot of meat, and this is one of my favorite meals.

@@JohnBarron-n To be fair, I have darkened the doorways of many Italian beef joints in Chicago and Chicagoland. Cheese is a frequent option. Usually provolone or Mozzarella. Traditional? No. Atypical, also no. It's a normal option. Locations that include cheese of note: Mr. Beef, Portillo's, Luke's Italian Beef, Jimmie's, etc etc etc. It's normal.

I've never had an Italian Beef sandwich. It looks delicious! I've also never been to Chicago (closest I ever got was the Quad Cities in 1993). I really want to visit some day so I can try their food, including this and their deep-dish pizza and hotdogs.

Cheese is fine, delicious even, but what you want to do is put the cheese on top of the sammy. Two reasons. First, it allows the Jus to soak into the bread giving that authentic crispy on the outside, mushy in the middle texture. The other is that you can hit it with a torch/broiler and brown up the cheese adding even more flavor. And don't forget, you can add an Italian sausage cut in half lengthwise with a little red sauce for an even more devastating (to your waistline) experience.

Granted, I’ve only lived in Chicago for a little over two years now (and still haven’t had an Italian beef, sue me) but this looks divine. I would definitely take it with cheese on it. But even I know you need to dip it!

I prefer it with mozzarella and I am a Southside, you can do red sauce on it no matter what Northside say.

My dad goes with red sauce, provolone, and green peppers, but I'm personally a purist so go with only beef. :) Tony's Italian Beef on Pulaski, *chef kiss*.

Lifelong Chicagoan - you taught me how to make my favorite dish..beef bourguignon. I don’t mind the cheese or using chuck roast. Au jus looks amazing, as does the giardiniera. 10/10…no Chicagoans going to hate on that sandwich.

I’m Chicagoan and I like cheese too. Some places do have the option. I live in the suburbs and the Teo biggest options are chains Portillos and buona beef and the buona has cheese as an option.

If you haven't been to Tony's Italian Beef on Pulaski, give it a try. You won't go back to Portillo's. ;) My dad enjoys red sauce, peppers, and provolone but there's a lot of options. I stick with it plain dipped and it's a juicy mess of flavorful beef awesomeness.

⁠@@LadyRenirai only get chain when im hankering for a beef in the burbs. If i make it into the city i get one offs. I’ll have to try Tony’s if im ever near midway i usually stick typically stick to Mexican food near there.

I know Matty's a friend of the show, but Courtney Storer is no doubt the one that developed the Italian Beef in The Bear. She's the Culinary Producer and a renowned chef in her own right, and she actually grew up in an Italian family in Chicago. I'm sure Matty had his say, but I doubt that Canuck knows more about Chicago style Italian Beef than her.

Matty is actually a Producer and consultant for the show, he works beside Coco. They've got some collabs together on YT aswell.

@@jsalinasbarros If you watch the episode where they make these together, you see how Matty was pushing his towards the way he personally likes it, whereas she was trying to keep hers 'traditional'.
