Can confirm cheese is not heretical. My apartment is about a three minute walk from Mr. Beef (the filming location and inspiration for The Beef), and they have a provolone option for their Italian beef. It’s my go-to!

@@archivist_of_dragonstoneyou can't go wrong with the Italian beef. The only thing you have to decide is how wet you want the bread. You definitely don't want to order it "dry" because all the flavor is in the gravy. Ordering it dipped means they dunk the entire roll into gravy. The best option (in my opinion) is somewhere in the middle.

You can get your beef in three options: Dry, dipped, and wet. Dipped is basically they rapidly dip each end in the jus. Wet is they put the whole sandwich in so the bread soaks up all the liquid. Dipped is the way to go.

Also, for bread, try Turano. Turano bread trucks are pretty iconic in Chicago and their French rolls are what a lot of places use.

There's a Chicago pizza place called Vito and Nick's (vastly better than Pequod's, BTW) that makes their own Italian beef for their Italian beef pizza; which is spectacular. I think the process for mak8ng this is somewhere online. Order your giardiniera from J.P. Graziano's on Randolph Street; obviously get the hot.

@@JohnBarron-n To be fair, I have darkened the doorways of many Italian beef joints in Chicago and Chicagoland. Cheese is a frequent option. Usually provolone or Mozzarella. Traditional? No. Atypical, also no. It's a normal option. Locations that include cheese of note: Mr. Beef, Portillo's, Luke's Italian Beef, Jimmie's, etc etc etc. It's normal.

Cheese is fine, delicious even, but what you want to do is put the cheese on top of the sammy. Two reasons. First, it allows the Jus to soak into the bread giving that authentic crispy on the outside, mushy in the middle texture. The other is that you can hit it with a torch/broiler and brown up the cheese adding even more flavor. And don't forget, you can add an Italian sausage cut in half lengthwise with a little red sauce for an even more devastating (to your waistline) experience.

I’m Chicagoan and I like cheese too. Some places do have the option. I live in the suburbs and the Teo biggest options are chains Portillos and buona beef and the buona has cheese as an option.

If you haven't been to Tony's Italian Beef on Pulaski, give it a try. You won't go back to Portillo's. ;) My dad enjoys red sauce, peppers, and provolone but there's a lot of options. I stick with it plain dipped and it's a juicy mess of flavorful beef awesomeness.

I know Matty's a friend of the show, but Courtney Storer is no doubt the one that developed the Italian Beef in The Bear. She's the Culinary Producer and a renowned chef in her own right, and she actually grew up in an Italian family in Chicago. I'm sure Matty had his say, but I doubt that Canuck knows more about Chicago style Italian Beef than her.
