They're really all the same, just mild measurement differences with bakers trying to be different than others. Sift flower, salt, sugar, add cold butter broken up, sometimes shortening/lard, ice water, and there you go.

Ma'am, I would never believe you could kneed a pie crust and my crusts were always crumbly patch- works. Your way really worked and for once, I had a pie crust that I could work with and it was light and flaky too when it was cooked! Thank you!

This worked great for me after trying many others methods with less than good results. I especially liked the tip to pound the dough round before rolling and the crimping method. Also mixing the vinegar with the water is great too. I used to just throw it into the flour. Worked perfect for me the first time.

Thank you dearly for sharing your post,; in suffering a brain injury, and relearning to cook, this was by far seriously helpful in breaking down details. While I don't have a mixer or food processor yet and did the mix by hand, I kept looking for the texture that you highlighted and continued until achieved, This was absolutely wonderful for a chicken pot pie that took me three days to complete since I have partial paralysis, however in mixing sugar, added garlic italian seasoning, apple cider, and the exact amount of water you indicated, this is the only one that gave beautiful results. I was taught to use lard as well because in our home butter was too expensive back in the late 50s/60's !

@@donnawhite1876 - lard doesn’t burn or add colour either like butter does. I fry eggs in lard too. They turn out perfectly. We don’t eat fried food often, so it’s not too harmful or fattening.

This is for one crust, double it for two. * 1.5 cups all purpose flour (don’t use old flour) don’t sift it, put it in a bag and shake it to unsettle it. * pinch of salt * 1/2 cup lard (the best you can find) * 3-4 Tablespoons cold water * Stir together flour and salt. * Cut in lard until you have a nice crumbly mixture. * Add just enough water to make it come together into a dough. * Pat into a flat disk and wrap with plastic wrap. Chill at least a half hour. * Roll into a thin circle and fit into your pie pan. Crimp edge. Cold water and cold lard is best, the dough won’t melt and be easier to work with. Don’t work it too much, you’ll work all the air out of the dough and it won’t be flaky. (My biggest mistake when I first learned.) My mom and aunt were fascinating to watch make pies, when they worked the dough, they were very gentle with just their fingers not they whole hand as I was doing. My pies crust was hard, theirs were flaky. It took me years to learn how to handle dough correctly. Don’t roll it too much either, roll it out, get a circle and stop……don’t use too much strength when you roll, nice and easy. I apologize if you are an experienced pie maker, some people have asked for the recipe who have never baked anything before. It’s a great crust, you’ll be pleased I’m sure. Thanks for asking. Enjoy.

I have never baked a pie but have always wanted to. My mother was a great cook ( she learned from her deaf grandmother when she was a girl) and could whip out a pie in no time or so it seemed. I have been looking at you tube channels for pie crusts and pies. I loved your presentation and I am ordering your book. I really connected with your advice that it takes practice. I am a great believer in experience, and that means doing something over and over until you are good at it. I am also a Hoosier.

Practice makes perfect. I taught my self before there was internet. Meaning years ago I was not able to learn from internet cause it was not available. The cook books I had then never stressed cold butter. Instead crisco. Kept at it till I finely got the hang of it. Would have been nice to have been able to look at you tube and watch videos on making pie crusts. So practice and good luck.

Made this recipe today for a chicken pot pie. Followed the recipe and the crusts came out very flaky and delish!!! So proud!!! This recipe is a keeper! If anyone only has salted butter like me, I only added 1/2 tsp salt not the amount she recommends. The crust wasn’t salty at all.

I have made many many pie crusts, even have a youtube video of my own. But for some reason, after all my success in pie crusts, I still have failures and imperfect pie crusts. Until now. This recipe and method works every time. My first pie crust using this method turned out exactly like that of the video. Exactly. Thank you very much for sharing. I wrote down the recipe for my use: Best Ever Pie Crust (Chicago Tribune/ JL) Ingredients ● 2-1/4 cup flour ● 1 tsp kosher salt (original: 2 tsp) ● 1 Tablespoon sugar (original: 1/2 Tablespoon) ● 9 Tablespoons butter (1-1/8 stick), cubed refrigerator ● 5 Tablespoons butter, cubed, frozen ● 1/2 cup ice cold water + 1 tablespoon vinegar (will not use all of the water) Directions 1. Cube 5 Tablespoons of butter and place in the freezer. 2. Prepare a pie pan with shortening and a light coat of flour. 3. Add flour, salt, and sugar to the food processor and pulse. 4. Cube the fridge butter and add it to the food processor. Short pulse until like sand. 5. Add cubed frozen butter and short pulse until like sand. 6. Add 5 tablespoons of water mixture and short pulse. The dough SHOULD NOT come together in the food processor. Take a handful of dough and press it in your hand. If it comes together, you're done. Otherwise add 1/2 tablespoon of water mixture and test again. 7. Dump dough onto a lightly floured surface and knead until the dough comes together with a smooth exterior. 8. Divide into two pieces, flatten and shape into disks, wrap in plastic wrap, and let rest in the refrigerator for at least 1/2 hour or overnight. (I use approximately 390-400 g for a single pie crust). 9. Remove the dough from the refrigerator and using your hands, flatten into a larger disk. 10. Roll out, frequently rotating dough 90 degrees. Roll out to approximately 14 inches. 11. Use a 14" form to cut excess dough, then place dough in your prepared pie pan. 12. Crimp, and allow to rest in the refrigerator for 10 minutes then in the freezer for at least 15 minutes.

Enjoyed watching. Your techniques just validated what I had learned from a mother in law who made apple pies for years for church bake sales. Only difference was not using the food processor. Instead, used pastry cutter to incorporate the butter in the flour, taking care not to overwork things. Took about 4 minutes to make a similar crust. Thanks for sharing the crimping technique.

I'm hoping my comment reaches Paula Haney, since this video is 7 years old. I've experimented with tons of pie crust recipes, but this one had the absolute best flavor and consistency as well. It's a far cry from the shortening and butter combo. The bottom of my crust was a tad bit thick, but I believe it needed to be rolled out a little more. Thanks so much Paula.

Thanks so much for sharing. When I was in culinary school I remember fighting with pie 🥧 dough. My Chef made me stop and said “ why are you letting this dough win this fight?” She was right. So now I try to have patience because I like to bake and I should be enjoying it. Your way is the best I’ve seen. Thanks again!! Xx
