Chicken and Rice Casserole Our Favorite Recipe
Chicken and Rice Casserole
Ingredients:
3 chicken breast cooked and cubed
2 cups chicken broth
2 cup instant rice
2 can cream of chicken soup (10 oz)
1 can cream of mushroom soup (10 oz)
1 cup shredded cheddar cheese
Salt and Pepper to taste
½ tsp poultry seasoning
1 sleeve Ritz crackers crumbled
Directions:
Add Ritz crackers to the bottom of a 9x13 greased casserole dish
Mix chicken, chicken broth, rice, cream of chicken, cream of mushroom, ½ of the cheddar cheese, salt, pepper and poultry seasoning in a bowl
Spread mixture in the casserole dish
Bake at 325 to 350 degrees for 30 to 40 minutes until bubbly
Sprinkle the rest of the cheddar cheese on during the last ten minutes of cooking. (optional sprinkle some parsley on also)
Serve and Enjoy !!!

I use Pepperidge farms bread crumbs w a bit of melted butter as my casserole base. This is another excellent wrinkle in the brain. In a pinch substitute crackers for bread crumbs. Looking forward to sharing this chicken & rice recipe with my husband tomorrow. My first room mate made a delicious broccoli casserole. She used really thin bacon and cheddar cracker on top and it was amazing. I have tried to duplicate it but something is always missing. This one will be on our table this weekend! We usually just add a mixture of garlic powder and melted butter

Thanks for watching. Yes, you can use raw chicken but you have to cook the casserole longer in the oven. We usually boil several pieces of chicken to make chicken salad and use some of the chicken for our casserole at the same time. Have a great weekend, Calvin and Marie
