This casserole was a favorite of my mother-in-law Gloria. She would make it, dish it out in portions and freeze it. When she was ready to have it, she would thaw it out, heat it up, and enjoy it as if it was the first time she had eaten it. She offered it to me one day and I have to tell you, I was amazed at how delicious it was. And today, I was amazed at how easy and simple it is to make. I hope you will try this delicious casserole and let me know what you think of it. It is another one dish meal. Recipe below.

Ingredients:
2 whole chicken breasts, boned, skinned and cut into 2X4 inch pieces
1 tsp salt
1/2 tsp pepper
2 Tbsp oil
1 bundle fresh asparagus, cut into pieces, or 2 - 10oz packages of frozen
1 can cream of chicken soup
1/2 cup mayonnaise
1 tsp lemon juice
1/4 tsp turmeric or 1/2 tsp curry powder
1 cup sharp or mild cheddar cheese
Directions:
Sprinkle salt and pepper over chicken. Toss. Heat oil in 10inch skillet. Add chicken and cook until browned lightly. Add cut up asparagus to 8X8 or 9X9 baking dish that has been sprayed with non-stick cooking spray. Place chicken over asparagus. In a medium bowl, mix together the cream of chicken soup, mayonnaise, lemon juice, and turmeric. Stir well. Pour over chicken and asparagus. Sprinkle cheese over top. Cover with aluminum foil. Bake in preheated 375-degree oven for 30 minutes or until bubbly and slightly golden.

In Europe, which doesn't seem to be a very big or known thing here in the USA, there is a Pie called Banoffi. Before, you couldn't buy ready made caramel, people would boil the sweetened condensed milk and turn it into caramel. On a pre-made Graham Cracker pie crust, you pour into this caramel and spread to form a base, add sliced bananas, scatter some chocolate chips and top with whipped cream. It's an easy but absolutely gorgeous pie to eat. It's best to make the pie up, and allow to refrigerate first before serving.

That was my late husband's favorite dish. He loved to cook and was not able to work due to his health so he would cook supper every night and this looked just like his. He would have it done for me when I got home from work. I was in tears when I saw the finished product. I am going to make it for myself, it's a comfort food. Thank you for sharing this recipe

Karen that's what I call a good meal. It gives me comfort to watch your videos. You remind me of my Mom and older sister since she looked like Mom. They are in heaven now. Maybe that's why I came across your channel. A little Devine intervention going on. Thanks for your great videos. Take care of yourselves. Didn't want Paul to feel left out.

Hi Karen God bless you this is your friend and good from the Columbus church country just wanted to give you a little tip on cooking the caramel in the cans we should do that in 1970s I don't know if you remember we would take a can opener and make a tiny hole in the can on top to release the pressure and wrap the can in foil and place in a pot of water ,of course not over the top and we would cook it for 1 hour do you remember the galloping gourmet he's the one who had that recipe on air he taught us this , so it's possible to do it on the stove I have done it many time,ok well God bless you love your show take care and have a great blessed happy New Year 👍😊🌻🌼🌺
