Chicken Curry is a rich, creamy, and aromatic dish. The Filipino version has coconut milk in it. Today, let me share with you my other version that does not need coconut milk or gata. A simpler one yet the taste won't be compromised. Very ideal for every special gathering because it is quick and easy to prepare and will surely be a hit on the table. Here are the ingredients:
1 kilo chicken
4 pieces potato, optional
9 cloves garlic, minced
3 medium onions, chopped
80 grams tomato sauce
1 tsp turmeric powder
2 tbsp curry powder
1 tsp paprika
2 cups water
2 tbsp brown sugar
1 piece chicken broth cube
3 pieces chili fingers, chopped
fish sauce to taste, adjust accordingly
NOTES:
📝 You can add another cup of water if you want it saucy.
📝Soak chopped chili fingers in a bowl of water for 5-10 minutes to lessen its spiciness.
📝You can use freshly chopped tomatoes instead of store-bought tomato sauce.
📝 This serves 6-8 persons
