Very well explained! Having powdered spices in the fridge saves so much time and efforts. I love to add some dry kasuri methi leaves rubbed between the palms, towards the end, to add flavour as well as, to make it more healthy. I do so in almost every gravy dish as well as lightly sautéed veg dishes.

Wow awesome. We make it almost the same way .slightly different. We don't use garam masala instead we use some potatoes ( huge chunks) and pepper. Now I will try ur style. It looks 😋 yummy.
