The wine is needed to deglaze pan of bits of chicken etc , plus if you are AFRAID of wine for religious reasons, the heat boils off ALL the alcohol, leaving the rich flavor .

I made a chicken fricassee without mushrooms and I must say that its soo good, with only a few simple steps there is loads of flavour , I recommend trying to make this even if you don't have all the ingredients it will still taste amazing!

My grandma used to make this... whenever I would mention it to other people no one knew what I was talking about. I thought this was one of her made up recipes. I cooked this dish yesterday, left it overnight to let the ingredients get to know each other and had it with mashed potato and green beans. Excellent. I was okay putting the butter in at the start, because , after all, it is French, but I could not bring myself to add heavy cream, then sit and watch my arteries harden. I substituted natural Greek Yoghurt...seemed to work, although I had to mix the sauce with it before adding. the full pot. Thank you for providing this recipe...thought that a dish with such a posh name would be complicated. You made it easy. Fond regards from sunny Spain.

Verjus blanc is another great sub for non-alcohol as it is still derived from grapes. If the absence of alcohol is in support of a former alcoholic then I completely understand. If it is because one is worried about the alcohol content then the alcohol will be simmered off totally in the cooking process.

@@tomf3150 lemon juice is really nice with chicken but be careful you don't use too much lemon juice or white vinegar as they can cause the cream to split, separate. Also, tests have been done on alcohol used in this way, the majority of the alcohol does evaporate away but not completely.

I love that aspect of food blogs and shows as well, sort of like the Jamie Oliver style. Amazing what that man can crank out in a half hour with 5 ingredients. Sometimes the less complicated things are, the more people will be inclined to not only cook more but to experiment on their own by just replacing one simple ingredient for another favorite “just to see.“

Oh.My.Gosh. This recipe is so good! Creamy, buttery! I can't believe I pulled it off the first time! It is now one of my favorite chicken dishes! 🤤 Thank you for sharing! Pro tip: Mix chicken consome pouder with your salt and pepper for extra chicken punch! Just keep in mind that the consome is usually a bit salty, so adjust your salt accordingly ✌️ Ultra pro tip: along with the cream, add a spoon of normal Dijon mustard and another one of Dijon with seeds and prepare to be mind blown 🤤🤯

I’ve cooked this recipe MANY times and everyone has loved it! The only thing I do different is add a tad bit more thyme and REALLY REALLY sauté those onions(around 25-30 min) because I like them REAL soft and sweet 🤤 ! Please don’t skip the wine it makes such a difference in depth of flavor 💯 I just made it last night for my boyfriends family and his mom LOVED it, so much that she’s going to try cooking it herself today! Also, if you can’t make your own chicken stock and have the extra money it tastes soooo good with the bone broth from Costco!!! I've made this for years and never knew it was called Chicken Fricassee. I just called it chicken with white wine and my wife and kids knew what I was talking about. Being from the lower middle class of America in the 1960s and 70s what we called Chicken Fricassee when I was a kid was made with Campbell's Cream of Mushroom soup which created a much whiter, kind of salty sauce without the great flavors and nuances of the butter, herbs, wine and broth in this recipe (not to mention the use of fresh mushrooms here vs the teeny tiny bits of rehydrated dried mushroom in the Campbell's product). My dad still makes the Campbell's version from time to time and it's not bad, mainly because it brings back fond memories of my childhood, but there's a reason I came up with this version independently through trial and error.

Tried this recipe did everything except the heavy whipping cream and it still turned out great. Great with mashed potatoes you can use the gravy for the mashed potatoes too😋

Probably not a heavy whipping cream, probably 15% cooking cream. Adds richness without too much else.

Its definitely not whipping cream as that contains gelatine, it will be cooking cream but pure cream which is naturally thick does also work.

We followed this recipe and are eating it now, and this is 1000% comfort food! For added yum, put whatever heavy cream is left in your carton into the potatoes while you're mashing them.

Rustled this up for the family today and it went down a storm. Skipped the mushrooms and parsley, replacing the shrooms with carrots. It's better than anything Gousto and Hello Fresh have offered in the last 18 months. Looking forward to working my way through more of your recepies :)

I’ve made this several times with chicken legs that have skin. Last time, I did not have mushrooms. I chopped up fresh carrots, and frozen peas. Delicious!

Made this last night couldn't believe how it turned out the whole town stopped by asked if they can try it, I invited them inside I had batches of it cooked and ready to serve, as the guests were waiting I told them they had to leave because I never cooked the chicken and none of them exists best chicken I never cooked ever!

thanks so much for the recipe! 🙏 this was so easy to make and restaurant quality delicious! didn't have lid so just simmered it uncovered for 30 min and forgot the parsley but amazing nevertheless... ate it with grilled veg & baby leaf plus focaccia to mop up the sauce! made tons of sauce that I plan to use as pasta sauce tomorrow. The sauce was great even before cream was added 😋
