You are missing out! The pan drippings make the best gravy, and I use the leftover seasoned flour for the roux. 🙂

Iam doing tge same. The gravey will be much better using tge drippings from the steak.

also add the milk slowly and keep stirring while making the gravy. this will greatly help with getting all the lumps out.

It's a Cutlet. Once you realize that, it doesn't really matter that the name obscures the nature of this dish. Good Job Chef! 👊👊

You do two things differently than most others’ videos: you make your gravy first, and you apply the egg first. Most everyone else I’ve watched makes their gravy from the fond. They also dredge, egg, and then dredge again. I’d appreciate your views on these differences. Either way, your steak looks delicious! 😋

Chef Parisi, man you've done it again! This dish took me back to my childhood! Used to love watching and helping my grandmother make Chicken Fried Steak (aka Smothered Steak) and Mashed Potatoes! We used to have it with brown gravy. Southern Food often gets a bad rep because of the high carbs but for me it's delicious and a celebration of my culture. Thank you for your wonderful videos!

This is one dish I have never attempted in my life. In fact , I'm not sure I ever had it! But I will for sure try it soon! Thanks for keeping it simple!

Made this tonight & the family enjoyed it. I added a few more ingredients to the gravy but other then that, I followed the recipe. I served it with your garlic mashed potato recipe 👌🏻 thanks for your easy instructions 🥰

I completely forgot about chicken fried steak. Bringing back memories of my Marine meals at a mess hall...lol. I will try this very soon but the best part, I get to take my time and actually enjoy it. Btw glad you’re not wearing that horrible St. Louis Cardinals hat. Go Cubbies!

The pan drippings and the seasoned flour undoubtedly make a fine gravy. Then again, it might be overkill. Chef Billy's method offers a mellower balance. You can always add spices--but never remove them. The basic milk gravy is the safest starting point, then one can jazz to taste if desired.

@@ChefBillyParisi I did it! OMG this was absolutely awesome! Mine didn't turn out as "pretty" as yours if you will but so tasty! I'll have to figure out how to really make it golden brown like yours but everything else was great. I bought a 3.17 pound bottom round piece of meat @ 7.99/ pound and ended up with 12 slices of varying size but in the end it was cheaper than the cube steak next to it at hyvee that only had 4 slices for 11.99. The gravy was spot on! I'll be adding this to my book! Thank you chef! Now for the shepherd's pie!

Live a little! You can have everything in moderation. Just don't eat the entire batch of steaks and you'll be fine. I promise.

@@Deckson25 there are *always* ways to work around things like that. That's part of learning how to cook. Instead of the full fat milk, use something like Organic Valley Fat-Free Grassmilk. Instead of the bread crumbs, use keto bread crumbs. Instead of the flour used to thicken the bechamel, use something like arrowroot powder. You *can* eat this! All you have to do is try.

It’s cubed steak - cooked using the seasonings, coating, and technique more commonly used to fry chicken.
