Learn how to make Chicken Galantina (also called Rellenong Manok) with a homemade gravy from scratch. The chicken is deboned, soaked in a soy-garlic mixture marinade, stuffed with delicious pork embutido and hard-boiled eggs, formed into a cylindrical shape, and baked to a beautiful golden-brown. It's an elegant and impressive dish that you can do ahead of time, served hot or cold. Enjoy!

Ingredients:
1 whole chicken (3 1/2 to 4 lbs) [1500 to 1800 g]
Soy Marinade:
1/4 cup soy sauce [60 mL]
1/4 cup white vinegar [60 mL]
1 cup water [240 mL]
3 tbsp granulated sugar [37.5 g]
1 tsp ground black pepper [2.3 g]
5 cloves garlic (smashed)
1 bay leaf
Pork Embutido:
1/2 cup ground pork (about 1/4 lb) [100 g]
2 tbsp crushed pineapple [28.2 g]
2 tbsp pickle relish [30 g]
2 tbsp minced kalamata olives [22.5 g]
1/4 cup grated gouda or edam cheese (queso de bola) [20 g]
1 egg [50 g]
2 tbsp yellow onion, minced [6.5 g]
2 tbsp carrots, minced [11.2 g]
1/2 tsp salt [2.8 g]
1/4 tsp ground black pepper [0.6 g]
2 tbsp diced chorizo [about 1 oz or 25 g]
Other Stuffing / Final Seasoning:
2 eggs (hard-boiled & peeled)
2 tbsp unsalted butter [28.4 g]
1/4 tsp paprika [0.6 g]
Optional for Gravy:
1 cup chicken broth [240 mL]
1/2 cup whole milk [120 mL]
2 tbsp all-purpose flour [15.6 g]
1 tsp fresh thyme [1 g]

Will try to do this. I have been wanting to make this galantina. The last time we had this was when my mom made it. She has passed on and we never had it. I was intimidated with deboning the chicken, Thanks to you and Donald, I think I can do it. Also, I can make embotido with the stuffing. I wrap my embotido with cull fat the way my mom did it. This is the way they cook embotido in our town in the Phil. Thanks again and excited to try it.

I have the impression that Gallantina and Relleno are two different versions of stuffing chicken... Gallantina from what i gather is a micture of meat and pasta (Macaroni) stuffing much like the Itallian Timpani only stuffed inside the chicken instead of the Timpani bow., while Relleno is traditionally meat mixture much like embotido or meatloaf... I watch the late great Nora Daza make this two separate dishes in thee late 70's.... just saing as all.

Should take out more meat from chicken and ground/ chopped finely and mix with other mixture. I like the classic recipe.

Excellent and understandable instructions, but it's really a work of love recipe. It could still flop if the filling is not up to par with the hard work, but your filling looks good. However, I think the eggs are overcooked because the yolks are surrounded with gray to which would not be acceptable to my late mother-in-law. Perhaps you could reduce the time in cooking the eggs a couple of minutes? But great cooking guys! Thanks!!
