It's really interesting actually! We make something very similiar as a turkish breakfast dish, similiarily with cheese and cornmeal, called Muhlama or Kuymak. It's amazing when dipping in with fresh bread

Looks awesome . One question: why take first batch with butter out and then put it back in with more butter ? Why not just throw the second half of the butter in the same pan ?

Too much burnt flavor will affect flavour. You can add olive oil to butter to prevent burning. Or do it in ghee. And add butter for second part of cooking in pan before adding milk.
