@@Jhonjiguantinas The herbs Jamie Oliver utilized for this recipe consist primarily of marjoram, basil, and parsley. I may be inaccurate in saying this, but I believe you can replace marjoram with herbs such as thyme or sage if marjoram isn't available where you are.

To take the gravy to another level simply save the pan water from boiling the lemon and use that to make the gravy. The subtle lemon flavour it adds is really nice.

I have tried for years to make a baked chicken. It always ended up just okay. But I don’t eat the skin and when that is gone so is the flavor. I want to say I have successfully made the best baked chicken of my life. It is moist and the flavors just explode. Then with all the meat left(which wasn’t a ton) I made my homemade chicken noodle soup with it. I want to say THANK YOU for continuing to give me confidence and inspiration.

You can obviously put whatever you want under the skin. - the herbs are good, but trying mixing the butter together with about half a bulb of garlic, some dried chilli and tarragon. - turn the chicken once or twice, drain the fats & lemon juice 10 min before the end of cooking and then salt the skin for the last ten min. Enjoy....

this is GREAT!!! the temperature is perfect, the time is perfect, you’ll get a juicy chicken with the perfect chirpy skin, PERFECT😍😍 in case that you are using dry herbs or paprika or other dry spices as a rub I would recommend to cover it for 30min and uncover it for the rest of the time. 😊😊

I made this tonight with dried herbs (all I had in hand at the end of the week) and cooked the chicken and onions over potatoes. When the chicken was done and the juices drained for gravy, i smooshed the potatoes and stuck em back in the oven. I think this was the most amazing one pan dinner ever. Cant wait to try it with fresh herbs.

This is amazing! Had to deviate a little bit..used dry marjoram and dry parsley with some fresh cinnamon basil that I have growing. Also, I mashed the onion and garlic up after the chicken was done and did not strain those onion and garlic bits..why not keep them in the gravy, so I did and I think that makes the gravy more scrumptious than without. Thank you!

The very cheap chickens are crap. Those very cheap chickens are intensively reared and grow at alarming rates (usually slaughtered after 30-35 days), stuffed full of artificial foodstuffs and excessive amounts of antibiotics. This isn't quality food, and it's extremely cruel. I'm of the opinion that those of us who make the decision to eat meat need to ensure our meat is responsibly sourced. It costs more, but that's fine because we shouldn't be eating so much meat - we should limit our meat consumption so that when we buy a piece of meat, it's the absolute best it can be and really put the effort into cooking something of top-notch quality that respects the animal. You can taste the difference between a quality piece of meat and a cheap one.

Jamie makes this look so easy. I've got my attempt in the oven now and the prep work was a solid hour (half of which was trying to 'pop that little ball joint" twice. Sooo much connective tissue haha). My kitchen smells incredible though, and I've got some of his rosemary and red wine vinegar roasties in as well. Half an hour and it'll be ready :)

I was looking for a change in the usual chicken recipe and will give this a go but with dry herbs (I normally crush rosemary, cloves, salt and softened butter together and put that under the skin). However, the chicken that came out of the oven 3:15 isn't the same one that went in 2:54. The garlic goes into the tray as cloves, but comes out as a bulb!!.

I spatchcock mine. Roast covered for 1½ hours, then turn up oven to 400° to brown skin. Tent it and let it rest till I'm ready to serve. But that's just mine.
