Sour cream is like god of all souses in UA. You can it with anything: dumplings, salads, borch, pancakes, you can mix it with any jam, honey. You can add some oil and salt to get healthy equivalent of mayonnaise. And of course you can have cake "Smetannik" for desert.

If you're interested in Ukrainian cuisine you really should visit Lviv and, maybe, Odessa (night in train in any direction). There are many original places of interest at these cities, and Kiev residents themselves often travel to Lviv on weekends. :)

Honestly, I am not a foodie but for some strange reason I love food related KZbin clips and food shows; that said for now I don't recommend you to come here coz although it's 100% safe, after all I have been back for the last 17 yrs and gone back to Canada for more than 5 times for a visit; the reason I say this is coz there are no diplomatic ties between Iran and Canada at the moment; on top of it, you can surely get a visa but you gotta go/be on a guided tour (i.e., some governmental official will be with you at all times); as someone who watches KZbin more than 20hrs a week :) I guess I have too much time on my hand, I would recommend you both, should you have the time or money PLEASE cover some countries in Africa or South American, coz they are truly underrepresented on YouTude in terms of food, they are even barely covered by well-known food/travel KZbinrs like Mark Wiens or the guy from "Simply Dumpling".......I wish you both all the best and have a fabulous summer

I am surprised that when you two were in the German and Austrian alps, you didn’t have pork fat (schmaltz) with different kinds of herbs. It always comes with the basket of breads. I even had it on a Polish restaurant in Brooklyn. It sounds unappetizing but actually it tastes very good. Schmaltz was easier to produce in the alps then butter.

Sour cream is very similar to Colombian "suero", maybe the diference is that sour takes more elaboration after prime material is done but I hope it tastes the same when I travel to Ukranie. With that I'll only be missing "patacones" "tajadas de maduro y verde" and "fritos" to feel just like home. Also some warm weather and a beach.

My business trip to Kyiv is approaching fast! :)). I was wondering if you noticed if in restaurants they use pasteurized milk? And if the fresh fruit juices are safe? And lastly tap water? I see conflicting information about it online.. I won’t drink it but can I brush my teeth with it? And eat fruits washed with it? Sorry for all the ?? I think the more appropriate name is pork lard, not pork fat. Either way it's not as bad as some make it sound. It's actually quite delicious especially when there are layers of meat (kinda like bacon)

Their few different cuts of Salo ( pork fat/ pork belly or pork lard as you said....its all means the same....fat from the belly part of the pig). Their is Salo cut with just fat and skin part, then with half fat and half meat (yep, like bacon ). My favorite was with half fat and half meat fried with potatoes or eggs.

ThatBaileyLad Hey same here ;) I've always been drawn more towards countries belonging to the former Soviet bloc, basically European countries off the beaten path for most people in my country. I've visited Poland (twice), Ukraine, the Czech Republic, Hungary & I'll be visiting Russia at the end of the year. For some reason France hasn't really been at the top of my bucket list. I've visited the UK (England & Scotland), Switzerland & Finland before as well, sure they are nice countries to visit but I do prefer exotic European countries that have preserved more of their own distinct culture and uniqueness, rather than the global metropolis, big cities like Paris or London where it is a medley of people from all around the world. I'll definitely visit Ukraine again in the future, as I've only been to Kyiv the last time. The other cities like Lviv, Odesa and the Carpathian Mountains are definitely still quite high on my bucket list

Not sure if train from Kiev to Moldova. I took overnight train to Odessa (2nd class sleeper was only about $9 200-250 grivnas). Spent a few days in Odessa, then there is a train few days a week and a few Mashuka's everyday. Know one will speak English and you will likely go thru Transnistria. But I had no problems. You won't get a stamp in your passport. Get a Migration card, then they take it back when you exit around Bendry. When you cross into real Moldova, if they don't give you a card, then you must to to Migration office in cishinau to get one. I had no problems and went back later in the week to look around. Daily train and multiple Marshukas daily from Cishinau to Trisapol. Busses go to train station. Important to stop at migration window in station to get migration card, which will allow you 10 hours in Transistria. Then stop at exchange window. No credit cards excepted anywhere and no ATMs. You must chance US dollars or Euros for Transistrian rubles. Just don't get to much, can't exchange back anywhere out side of the country. But hey, you'll want to keep a few plastic tokens. Have fun. Be careful. (Technically is US citizen state department advises against going there. As they are not recognized the US has no diplomatic relations)

Actually, it is Horilka not "gorilka" ,(unless you're Russsian that cannot pronounce Ukrainian sound [ Г ].

Some history, why in Ukraine there are a lot of pork dishes. in 1600-1800 y. Turks and Tatars often attacked Ukraine and take many food, but don't take pork meat, coz they Muslim and don't eat pork. sorry for my English

I like that the girl takes big bites. It is more like pork belly (salo) than pork fat (poor translation on a waitress part).

Pork fat could be a lard too. Also pork belly sounds so much better and used in gastronomy . I would say a salt cured pork belly.

Not Kiev but Kyiv. Kiev it is in russian. In ukrainian it is Kyiv

Thanks for letting us know. In our city guide we put Kyiv and then the Ukrainian spelling of Київ at the beginning.
