Sophie1111, I had never heard of a loomi. Earlier above @Ebrahim Alfardan's recipe mentioned black lemons. I was nearly going to ask the question what exactly is a black lemon? I only knew about green and yellow! I searched for both and realised how everyday I learn new things from the internet! Thank you!

You can also add black dried lemons for the spice mix. Other than the fresh lemon peel. 😊

Mendi uses black lime and not lime skin. Its a dehydrated lime. U can make it at home by boiling limes in salt water for for 7-8 mins then take out and shock in ice water then dry it completely and leave in very hot direct sunlight for 1-2 weeks then if it has turned black then its done otherwise put it in oven at lowest temp for 1-2 hours or until it turns black. The dried lime will be completely black and has a strong lime aroma and the whole thing can be used, it will be very light and can bounce like ping pong ball, u can break it into pieces and put it in ur mendi. It wont be bitter at all. Edit: if ur using the whole lime skin and pith then its gonna ruin and be bitter asf, just take a microplane zester and zest only the green part of the lime and do not zest the white part cuz its bitter.

Great And amazing job. Just as a kind hint , smoking or using “ charcoal with oil” and putting at in the pot for 10 minutes at the end is an essential issue in Mandi to give us the smoky taste. 🙏😊🌹
