Chicken Mango Salad - 2 ways

Grilled Chicken
4 pieces, chicken breast fillet
1. Wash and pat dry.
2. Cut into butterfly.
3. Season with a pinch each of salt, pepper and garlic powder per side, per piece.
4. Brush with mustard.
5. Grill on a grill pan for 3-5 minutes per side.
6. Transfer to a plate once cooked and cover with foil until ready to be topped.
Salad Ingredients
Romaine lettuce - chopped into smaller pieces
Sliced tomatoes
Seedless Grapes cut in half
Mango cubes
Avocado strips
Grated Parmesan Cheese
Toasted Cashew Nuts
Mango Dressing
3 pcs. garlic cloves, minced
1/2 tbsp. lemon juice
3 tbsp. mayonnaise
1tbsp. dijon mustard
1/2 cup olive oil
1 pc. mango, pureed or mashed
1/4 tsp. salt
1/8 tsp. pepper
1 tsp. sugar
1. Combine all ingredients in a bowl and whisk until smooth.
2. Cover and refrigerate until ready to use.
3. Top on salad and toss to coat fruits and vegetables.
4. Top with sliced grilled chicken strips.
5. Wrap with a tortilla for a more filling meal!
