This Avocado Corn Salad is wonderfully fresh, healthy, simple and loaded with corn, avocados and cherry tomatoes. We make this corn salad recipe all summer long - perfect for BBQs and potlucks!

AVOCADO CORN SALAD INGREDIENTS:
►1 lb cherry tomatoes
►3 cobs of corn, grilled and shucked
►2 large avocados, peeled, pitted and sliced
►1/2 medium red onion, thinly sliced
►1/4 cup cilantro, chopped (1/2 small bunch)
►2 Tbsp extra virgin olive oil
►2 Tbsp lime juice (from 2 limes)
►2 garlic cloves, pressed or finely minced
►1 tsp sea salt or 3/4 tsp table salt
►1/8 tsp black pepper

I made this today! Definitely fresh and yummy. There is a spicy bite from the cilantro and onion. I suggest boiling your corn with sugar to make it sweet to cut all the acid and bite in the salad ! I enjoyed scooping with multigrain Tostito scoops

I saw the recipe on Facebook I think. I made it and omg I fell I love with the fresh flavors! My favorite salad to take to work. Plus- it’s very convenient because the lime keeps the avocado from oxidizing. Crunchy onions, delicious creamy avocado, fresh and aromatic CILANTRO, juicy and sweet tomatoes plus the roasted flavor in the corn omg Simple and delicious. I ‘grill’ the corn cob on the stove. I wrap it in foil and put it on my griddle. Medium heat and it’s well cooked after few minutes still with the roasty flavor.

My avocado was mushy ripe so I whipped it up with the olive oil and the lime juice to make a sauce! I also added a good sprinkle of carne asada seasoning to give it a slight southwestern flare. It was DELICIOUS!!!
