Recipe:
Ingredients:
4 boneless-skinless chicken breasts (or two large ones cut in half)
6 tablespoons butter
2 tablespoons vegetable oil
4-6 cloves garlic, minced
2-3 cups baby bella mushrooms, sliced
1.5 cups marsala wine
1 cup chicken broth or water
1/4 cup fresh parsley, chopped (or 1 tablespoon dried)
1/2 cup flour, plus 1 tablespoon for thickening sauce
1 teaspoon dried parsley (for flour)
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon pepper
Directions:
1. Pound chicken until thin.
2. Mix flour with salt, pepper, parsley, and garlic powder.
3. Dredge chicken lightly on both sides with the flour mixture.
4. In large skillet, melt 2 tablespoons of butter with the oil on medium heat and brown chicken on both sides.
5. Remove chicken to a plate.
6. Add the 4 remaining tablespoons of butter and sauté the mushrooms and garlic over medium heat for about 10 minutes, keep covered with lid.
7. Sprinkle the 1 tablespoon of flour on top and mix.
8. Stir in the Marsala, chicken broth/water, and parsley.
9. Add chicken back to skillet and cook on medium-low until cooked through (the longer you cook it, the more tender it will be).
10. Serve over rice or pasta with a sprinkling of Parmesan cheese.
