I love that Jack doesn't edit out when Chef forgets something and shows him correcting it. Makes me feel better about when I'm a little disorganized some days in the kitchen. Some day maybe we'll get to see Jack come around the counter and taste the dish after Chef.

Like the time I decided to make a chocolate cake based on the recipe on the back of the Hershey's can. I forgot flour. But it made a heck of a hot fudge Sunday sauce!

This is one of the big reasons I like the channel, nothing is edited, nothing is airbrushed. No chef in the world I have seen inspires people to get cooking in the home more than this guy. He shows that even the best makes mistakes. He makes it all fun, and nothing is too serious, but even so, every dish looks like it could be served in a top Michelin star restaurant.

Chef, I have begun to move from observer to student with this video (not that I am watching them in order, only that this is where I noticed the shift). As you were progressing I heard in my head things like, maybe add some sun dried tomatoes just before you said it, or as you added garlic (until the fragrance opens up), and other pieces like water is the enemy, and lower the heat with regular butter, but not with clarified, and so forth. Thank you for being more than a Master of Cuisine, more than a Chef, more than an Entertainer. Thank you for being a teacher.

My wife and I are a huge fan of the channel as of a couple months ago. She was so confused at Kroger when I bought all of these ingredients. We cooked this together on Sunday night and this is our favorite meal we've ever made together. Best part? We have leftovers for the work week! Chef, you are amazing. Hi Jean- Pierre, I made the exact same sauce with pan fried chicken breast yesterday, served them with Steamed baby potatoes, carrots and green beans for myself my wife and my the elderly lady next door, it was delicious however I am going to try the chicken balls as well sometime soon.

I did these and they came out fantastic! Be sure to allow yourself enough time to make these. There is a bit of prep and a resting period for the meatballs so, don't do as I did and not allow enough time. Also, make a test meatball and cook it through to taste it for seasoning. I'm glad I did as my test meatball needed a bit more salt.

Used turkey, skipped the tomato but added artichoke hearts to sauce and served over linguine pasta made with palmetto. Thanks 👍 it was 😋 delicious!! Used hint of salt nut-thin crackers crushed instead of bread crumbs. Turned it gluten free 👍😋

Bonjour Chef, I made this dish last weekend and it was absolutely delicious. I made a few changes to the ingredients as I didn't have everything to hand and as you say, "if you don't have it use something else or leave it out"! Replaced salami with some chopped pancetta fried with the oignons and replaced buttermilk with double cream. I was very careful NOT to measure anything. LOL. Just weighed the chicken to get an idea of the proportions. After all "it's only cooking, we're not sending a man to the moon" !! Thanks for another delicious recipé.

I made these meatballs for dinner tonight and served them with mashed potatoes and broccoli. We loved them. The gravy with the mashed potatoes was a great combo and the meatballs were delicious and so tender. The Genoa Salami and sun dried tomatoes in the meatballs took these over the top full of flavor. My wife makes fun of me, I'm there with my scraper tucked under my chopping board, my thermometer for my pans, my mise en place, I try to toss the frying pan but always spill it.........but she never complains about the result. CJP chef is fabulous, there might be technically better chefs out there in this World but I couldn't care less. For him to take the time to share his 50+ years experience with the world to such extent for free, and the way he inspires you to get in the kitchen, rather than intimidate you like so many chefs do makes him the best chef that has ever lived in my opinion. Plus he's hilarious, I could watch him all day. Cheers to you CJP X

NOTHING you teach is complicated if you pay close attention to the directions! I am a seasoned cook. Like you, I was taught to cook and bake at a very young age. (11 y.o.) We didn't have the knowledge such as what you bring to us today. If the young kids watch your channel and pay close attention, they may become a new Chef one day. You probably don't even realize how many lives you have changed by doing this channel. I am a "seasoned" cook and I have learned so many new things that I never ever heard of before watching you. Those adorable little "ummmmm" sounds Chef JP makes at the end of the video are everything🧡 PS: in the written recipe, you call for 1/4 cup each of chicken stock and cream. It looks to me in the video you used 1 cup each, which is what I did and it was deeeee-licious!

I made these meatballs tonight. Fantastic. In the sauce I used a can of cream of mushroom soup instead of the sliced mushroos and cream and used a leek (left over from the beer berf stew) instead of the spinach and got rave reviews from the family. Thanks, Chef.

I just made this sauce and served it with meatloaf......there was a little of the beef jus in the sauce too. Honestly, delicious. "Amazing"

I have loved your channel since your first day and I do remember you years ago on PBS, Today it occured to me one reason why the meat we ate growing up was so very excellent mostly beef and moose we shot in Northern Alberta. When we took down a moose, hung it from a branch and skinned it the very first thing we always did was to wash the carcacus down with warm water and at least a pound of salt. This was done so any flies would not land and lay eggs. We would transport the animals home then hang them in a meat locker for a month at low temp. Then cut up, package and freeze. That meat which sustained a family of six for the winter was juicy, succulent juicy. It all goes back to the salting technics that you always talk about with steaks. As children we were taught this more than 60 years ago. thankyou for keeping it real.

You know, I already make your meatballs with chicken, but I'm still making (and freezing) these tonight! My favorite part is seeing how simple and creative your sauces are. Chef, have you thought about doing a side dish series? Sometimes, I just feel boring. I'd love to know how to start establishing a better side dish catalog :)

I loved this episode, Chef! It was pure cooking jazz, just grooving and riffing, developing the flavors. I liked it a lot. And I love how you encourage us to trust our own sense of flavor and don't get too hung up on exact ingredients. I'm going to try this one out for sure! Can't wait for your Thai-inspired ones.
