As a Filipino in the UK, I'd always sautee the chicken with fish sauce until golden. I so this as a base for ramen or even rice porridge/congee. It adds a different layer of umami in my opinion. Try it..😊👍

This turned out great when I made it! Instead of mushrooms I used umami powder that is sold at Trader Joe’s, (my husband dislikes the texture of mushrooms) and it definitely boosted the flavor! I also used saved-up bacon grease to cook the chicken in, and that totally added a depth of flavor. Great recipe and cooking tips, thank you!

Hi guys trie this recipe yesterday... I made the following changes : added more garlic, cooked the chicken longer time 45 mins total,but on low heat, and most importantly added 3 to 4 carrots to the soup base to give that extra soup flavor... Otherwise it was rather bland... Good luck! And thanks again!

I've revisited this recipe and its techniques so many times, ever since this video came out. I just made it again, but added thinly sliced sticks of burdock root to the broth at the same time as the water, instead of noodles. The result is so fresh and comforting on this cold dreary day where I am. Thank you again for this wonderful recipe!

Ham makes everything taste better. I used to make soup in a pressure cooker to speed up time. I also brown the meat for a richer more complex flavor. I will try this. Thanks.

I made this last night. OMG so delicious! Tastes exactly like something you'd get in a Chinese restaurant. I skipped the ham, and it was still terrific. One thing I will add is that I decided to simmer the chicken a bit longer, since it wasn't quite tender, fall off the bone ready after 15 minutes.

I would love to have this soup for breakfast! I never really liked all the sweet pastries and cereals that are popular in the US. I usually just have leftovers from dinner the night before for breakfast. I’ll definitely give this broth method a try!

😐 A traditional American breakfast of bacon or sausage, eggs and toast is far more popular. Eating pop tarts and cereal for breakfast is more typical of kids or if you’re really in a rush.

Looks great and very easy! I will have to give this one a try soon. A fatty piece of country ham would be great for this! Broadbent Hams sells this online and has some of the best country ham I have had. The pieces are very fatty, and the flavor is very rich from being aged. I found them when I was living in Europe and they were the only ones I could find who would ship to me. Now, I stop at their store when traveling to visit family since it is about halfway on an 8 hour trip.

Just a tip: I would cut and wash the baby bok Choy and let it soak in water first while you’re doing everything else. You’d be surprised how much dirt collects in between the leaves.

Ill be using this as base for my daily soups. However I prefer to chop the shrooms + some chopped scallion whites + 1 or 2 chillies, all in a much more smaller size, stir fry them apart then add them to the soup.
