Hello Justine, I am a Hungarian living in Romania, close to the border with Hungary. We often make chicken paprikash, wich is one of the national dishes. Hungarians never remove the skin, that's where most flavor is after all. Also, we're not using fancy things like butter or olive oil for every day dishes like paprikash. We either use pig fat ( from smoked bacon preferably ) or regular sunflower oil.

One mistake here, you can't put paprika directly on a pan on the burner as it burns and the taste becomes bitter. You either take the pan off heat then stir in the paprika or the other option is to add a little bit of the chicken stock into the pan and then stir in the paprika.

This is my go-to recipe for chicken paprikash. As a Filipino, this is a dish that is not too familiar for us so it’s good that this recipe is so simple to follow but still delicious!

Not a real paprikash. Ruined it with smoked paprika. Highly offensive to Hungarians. And it's not a cousin to stroganoff.

That's false actually. In many hungerian households people are using smoked paprika for this dish especially if they don't have smoked bacon at home.
