Finally guys - the holiday season gives me the time to post a video that I wanted to do for a long time. If you've seen my Tuscan grill video here • Tuscan grill Surf 'n' ... you already know, that the woodfired Valoriani Pizza oven is capable of producing amazing flavour with the tuscan grill grate, that you place over the hot coal of the burnt wood and let the flame roll over the food/meat from the side. The major advantage of the Valoriani woodfire is of course that you have extreme radiant, convection and direct heat from the flames, the coal and the stone from all sides that roasts the meat equally from all sides - it takes only tow minutes or so to get up to the core temperature (chicken 71°C/steak medium 56°C) or so. It's finished with a great crust and roast flavours but still tender and juicy inside.
The Napoleon Prestige Pro 500 is a great bbq machine and an outstanding gas grill. So I wondered if it could keep up with the 'holy pizza and bbq trinity' - the Valoriani baby 75.
My main concern was that the sizzling zone gives you a kind of a coal like heat from the bottom but of course lacks radiant and convection heat from the sides. So I thought that can't quite end up in a proper fire-roasted chicken or steak ... but hey see for your self ... :)
HOW TO:
Get some local and organic meat from near by. Rub the chicken with a bit of bbq salt and your preferred chicken rub (this is the best for me: www.tv-spices.co.il/product/t...) and season the steak with kosher sea salt.
Napoleon:
Take a COOL (!!!) bbq rack for your sizzle sone. Place the meat on it and quickly rotate it with your bbq tool until the crust has developed (only two or three minutes or so.... Place in inderect heat at about 120°C and let come up to core temp. Finish the steak with your preferred spices. We like this one here: shop.block-house.de/blockhous... -
Valoriani:
Season like above and also place meat on a cool tuscan grill rack above the coal and light a log fore a direct flame. Rotate several times - the meat cooks even faster than in the gas grill sizzling zone. It is up to core temp after two or three minutes or so without the need of indirect cooking, an amazing crust outside and juicy tender inside ...
