+Dianne Nguyen The difference between a fricassee and a chicken stew is how the chicken is cooked first. In a fricassee, the chicken is seared (browned) first then added to the roux. In a chicken stew, the chicken is added raw and it boils in the roux.

How ironic 🐔 My old roommate is from New Orleans and he would make this for me. Omg...so good. I like it with a thicker roux or whatever but I'll eat the shit out of it. Can't wait to try it again. I'm happy you tried it and liked it. I completely agree that there is something special about those "hole in the wall" places. Cajun food in particular can be fantastic if prepared the right way. I am trying to find the time to make more videos. I know its what I need to do

yall nasty cause you NEVER add raw meat to cooked food the chicken was suppose to be cooked first, not all the way but browned. I bet those of you who feel this is ok also feel you don't need to wash and clean your meat neither? Looks like a pot of salmonella.

You do know how chicken broth is made? You must be a new cook. Why don't you look up so chicken soup/stew recipes you will find that raw meat is used.

I know how to cook and I show people with my videos. You left comments about how we are nasty. I assure you that is the way to cook this particular dish. The great thing about cooking is that you can change the way you prepare the chicken. I will give you a warning. I use young chickens and they cook very fast. The 1 hour they are cooking in the stew is a perfect amount of time to completely cook the chicken and not have it fall apart.
