In this video we will show you how to make Syabhaley. This is a Tibetan dish quite popular in Nepal and goes well with a spicy tomato chutney.
~ Chicken Syabhaley ~
✅ Ingredients
For the filling:
250gm chicken mince
1 finely chopped medium size red onion
Finely chopped spring onion
1 tbsp ginger garlic paste
Oil
½ tsp turmeric
½ tsp black pepper
Salt to taste
1 tbsp soy sauce
For the pastry:
2 cups plain flour
Water
Oil
Salt
➡️ Cooking instruction
Prepare the dough first by adding a pinch of salt, little oil and mix well together. Once mixed, start making the dough by adding water in small amount. Knead the dough for 5 minutes and apply some oil and let it rest for 30 minutes.
While the dough is resting, cook the chicken mince for the filling. On a pan, add 2 tbsp oil and let it heat. Add the mince and cook for 10 minutes on medium flame. The chicken will change colour and the water that comes out from the meat will also dry out. Add onion and cook for 2 minutes. Then add in turmeric, salt and black pepper and cook for another 2 minutes. Add 1 tbsp of ginger garlic paste and cook for another 2 minutes. Add 1 tbsp of soy sauce and mix well. Finish off by adding in spring onion.
*When adding salt, be careful not to add too much as soy sauce also helps in providing saltiness.
Next step is to complete the dish by making the syabhaley. Knead the rested dough for another 2 minutes, this will make the dough nice and soft. Then divide the dough into smaller portions to make roti. Roll each portion one by one to make syabhaley. Roll one portion and make a roti, add in the cooked mince meat (3 tbsp) and fold both sides. Seal the edges well and create the design by folding the edges (shown in the video).
To deep fry syabhaley, heat oil in a deep pan. To check if the oil is ready or not, drop a small piece of the dough into the oil, if the dough floats then the oil is ready for frying. Add the syabhaley and fry it until it turns golden brown on both sides. Make sure to turn the other side to fry well.
Enjoy syabhaley with either a tomato chutney or ketchup!

किमाको लागि:
२५० gm चिकन किमा
१ मसिनो गरि काटेको medium size को रातो प्याज
मसिनो गरि काटेको स्प्रिंग ओनिअन
१ ठुलो चम्चा लसुन अदुवाको पेस्ट
पकाउनको लागि तेल
१/२ सानो चम्चा बेसार
१/२ सानो चम्चा मरिचको धुलो
स्वाद अनुसार नून
१ ठुलो चम्चा सोय सस
रोटीको लागी:
२ कप मैदा
पानी
तेल
नून
➡️ पकाउने तरिका
पहिला सुरुमा मैदा को dough तयार पार्नुहोस, त्यसको लागी मैदामा थोरै नून र तेल राखी राम्रो संग mix गरिदिनुहोस। त्यसपछि थोरै थोरै गर्दै पानी राखी dough बनाउनुहोस। लगभग ५ मिनट सम्म dough लाइ राम्रो संग गुन्नुहोस र माथि मा अलिकति तेल दलेर ३० मिनटको लागी रेस्ट गर्न रख्दिनुहोस।
Dough रेस्ट गरि राखेको बेला, स्याभाले को लागी किमा तयार पार्नुहोस। एउटा भाडामा २ ठुलो चम्चा तेल राखेर तताउनुहोस, तेल तातेपछि किमालाई हालेर १० मिनट सम्म medium आगो मा पकाउनुहोस। १० मिनटमा किमाको रंग फेरिन्छ र त्यस बाट निस्किने पानी पनि सुखेर जान्छ। अब प्याज हालेर २ मिनट पकाउनुहोस र त्यसपछि बेसार, नून र मरिच राखी फेरी अर्को २ मिनट पकाउनुहोस। १ ठुलो चम्चा लसुन अदुवाको पेस्ट राखी अर्को २ मिनट पकाउनुहोस। त्यसपछि सोय सस राखेर mix गरिदिनुहोस। अन्त्यमा स्प्रिंग अनियन राखेपछि किमा तयार हुन्छ।
*ध्यान पुराउनुहोला, सोय सस हालेको कारणले नून चाहिने भन्दा अलिकति कम राख्नुहोस।
अब स्या र भाले लाई संगै जोडौ। त्यसको लागी अघि गुनेको मैदालाई फेरी एकपटक २ मिनटको लागी गुन्नुहोस। यसले गर्दा dough एकदमै नरम भएर आउछ। त्यसपछि सानो सानो टुक्रा गर्दै भाग लगाएर रोटी बेल्नुहोस। रोटी बेलिसकेपछी किमा भर्नुहोस् र फोल्ड गर्नुहोस। फोल्ड गरेपछि किनाराहरु सबै राम्रो संग बन्द गरिदिनुहोस। बन्द गरेपछि एउटा कुना देखि अर्को कुना सम्म बेटार्दै बुट्टा भर्नुहोस्।
स्याभाले फ्राई गर्नको लागी एउटा गहिरो भाडामा तेल तताउनुहोस। तेल तयार भयो कि भएन भनेर हेर्नको लागी dough को सानो टुक्रा तेल मा राख्नुहोस। यदि dough माथि तैरिएर आउछ भने स्याभाले फ्राई गर्नको लागी हाल्दिनुहोस। दुवै साइडमा राम्रो गोल्डन ब्राउन कलर न आएसम्म फ्राई गर्नुहोस।
स्याभाले टमाटरको अचार अथवा केचप संगै एकदमै मिठो हुन्छ।

Brings back childhood memories. I didnt realise it was tibetan, i always thought of this as newari dish. 2 thumbs up.
