One of my favorite curries is the beloved chicken tikka masala. You can make this dish at home by making your own curry powder and tikka masala sauce.

Shopping List:
+ For the curry powder:
1 stick cinnamon
1 whole nutmeg
2 dried bay leaves
1 Tbsp whole cloves
2 Tbsp cumin seeds
3 Tbsp coriander seeds
1 Tbsp cardamom
1 tsp red pepper flakes
+ For the chicken tikka masala marinade:
1 cup full fat yogurt
2 inches ginger, grated
2 garlic cloves, grated
1 Tbsp of the homemade curry powder (above)
Kosher salt
Freshly ground pepper
Drizzle of olive oil
3 boneless, skinless, chicken breasts (cut into 1-inch cubes)
+ For the tikka masala sauce
2 inches ginger, grated
1/2 small yellow onion, finely minced
2 cloves garlic, grated
1 small bird's eye chili, finely minced
2 Tbsp vegetable oil
1 Tbsp tomato paste
1 heaping Tbsp homemade curry powder (above)
1 28-ounce can of crushed tomatoes
Pinch of white sugar
3/4 cup heavy cream
Optional: serve with long grain basmati rice and cilantro garnish

@@hankrearden20 Generally speaking a lot cook with whole cardamom and cloves, matter of fact, grinding it like Babish did in the video is something I have never seen. And they never fish it out. You don't eat it, it has done its job, at this point it is going to be thrown away. And yet, its not fished out, and instead left as a nice surprise to keep you on your toes

@banu prakash The origin is British, no matter what you say. Like Shubham pointed out, the origins possibly has its place in Glasgow, or at least somewhere in the UK. Several Indian chefs (many of them being high end) call the dish inauthentic; in fact, the sauce was literally made with British people in mind as they like to have their meat served in gravy. Regarding Shubham's explanation, it stems from the story that ''On a typical dark, wet Glasgow night, a bus driver coming off shift came in and ordered a chicken curry. He sent it back to the waiter saying it's dry. At the time, Dad had an ulcer and was enjoying a plate of tomato soup. So he said why not put some tomato soup into the curry with some spices. They sent it back to the table and the bus driver absolutely loved it. He and his friends came back again and again and we put it on the menu.'' Whatever the origins may come from, one thing is 100% for certain; it's an inauthentic British dish inspired by Indian cuisine. By saying that Tikki Masala is a real authentic Indian dish, you are indirectly insulting Indian culture as a whole.

Mmm. I’m from the UK and am not a big fan of frozen food personally. Refrigerated? Of course, it’s safer. But I only buy frozen food if it’s a food that needs to be frozen (ice cream, for example).

@Nostalgia For Infinity I think it depends where you live. I live in the northeast of the USA and in the winter frozen vegetables r often to the "fresh" that had to be shipped around the world. I think England just isn't warm enough to grow all year round

Tikka Masala actually holds up very well to thigh meat. I use it all the time. Also, Ghee is your friend.

ThePrince Karma bruh who cares if it was or was not made in Britain. It’s called chicken tikka masala. Both tikka and masala are not English words. And it’s a dish that tastes similar to other Indian cuisine. U don’t see these type of ingredients in other British cuisine. At the very least u can admit that this is an Indian inspired dish which may have been made in Britain. That being said, even if it was made in Britain, it was prob made by a brown dude.

From what I've heard and read, this recipe came to Britain during colonial times and has recently become the unofficial national dish. Even some politician said so unless I'm mistaken. They just really like tikka masala I guess.

No matter what recipe you choose, adding the sugar and tomato paste to the onions is essential! The sweetness of the sugar and the acidity of the tomato paste perfectly contrast with all of the strong spices.

I have never enjoyed watching a curry recipe more than this one. The Indian in me got triggered when you "baked" your rice but I'm willing to overlook it because of how genuinely enjoyable this video and recipe is.

Ghee is more traditional but olive oil is always to hand and will give you the same result

Ghee wouldn't be used in original tikka masala, it's a scottish-indian dish, not an indian original.

@@ppppppqqqppp that's highly impossible since almost all the spices used are spices grown in regions close to the equator. It's more of an Asian dish that gained popularity in other countries. UK was influenced but this dish and it's exposure and decided to make it it's national dish

Sounds delicious, but me personally i prefer to use coconut milk instead of heavy cream. It brightens u a lot of the flavors and goes extremely well with those spices

Coconut milk or coconut in any way is mainly used in coastal cuisines of the country. Tikka is a North Indian dish and coconut milk doesn’t really fit in a traditional sense. But honestly you gotta do what your taste buds tell you! 👍🏻👍🏻

@@SimranSurya you're correct in tikka being a north indian dish but tikka masala was invented in glasgow when a customer complained his tikka chicken was too dry and wanted some gravy so the chef improvised, coconut milk not being common in the uk at the time he used cream but the dish being a love letter to making the best of what you have at hand makes using coconut milk a perfectly fine choice :D

Idk thats not a pro tip, thats just him fucking up. You shouldn't need the sugar if you sweat the onions properly, and if you do still need/want the sugar you should add it in before the tomatoes anyway to get the onions caramelising, not just the sweetness into the sauce.

@@cubsfan708 Jaggery isn't 'Indian sugar', its used all over Asia and Central and South America. It's also far less sweet and serves purposes beyond sweetening. Also as I said, if you still need or want the sugar it shouldn't be added in after the tomatoes but before, which is where I think he went most wrong

Love the vids, this channel is among one of my favorites. I have noticed this phenomenon lately, and I don't understand. Yes, people will probably cry that I am some sort of stupid hippie, but what is the deal with cooks being afraid of getting their hands dirty and using all these latex and plastic gloves these days? ummm. sure whatever you want to think. but I don't think "invented" is the right word here, more like modified to suit the British taste. coz chicken tikka masala was originally called Murg Masala( murg = Urdu word for chicken and Masala = Hindi word for spiced based gravy) Introduced to India by the Mughals( who originally invented it). it was modified into several versions by the different cultures of India. Then the East India trading co. came and then the Uk people tasted it and were like holy shit! this is amazing we must take the recipe back home and introduce it as something we invented. sooo... I mean u can boast about inventing but it ain't urs, just like half the shit in British royal museum.

In fact, in the late 1800s, early 1900s, it was typical of the nouveau riche that made their fortunes in India to bring back the cuisines of the region they were in and open small restaurants to bring it to the general public. Many of the foodstuffs and ingredients were altered, either to make it easier to incorporate it into the blander typical British diet, or improperly copied when trying to recreate the recipe. Look up Worcestershire sauce for more fun facts.

Umm if im not mistaken, tikka masala is just more fragrant gourmet version of butter chiken. Base is pretty much same except butter chicken require more butter, sugar, less spice and just pan grilled chicken instead of skewered chicken. Just Google murgh makhani recipe.

My brother and I tried the recipe and it turned out great for a first attempt. We decided to add a bit of butter into the sauce at the end to thicken it. We think a bit less tomato would make it less sour (so that we don't have to add more sugar to balance out the acidity). You bet we're definitely going to give this another shot. Parents loved it.

This recipe is great! It works well if you are cooking for your friends who cannot handle a lot of spice. I made mine using paneer instead of chicken but still turned out wonderful, that garam masala spice recipe I think is fantastic! However, I think to add a bit more flavor I added some more cayenne and chili powder to the dish! tastes great the way it is!

@MOCHATONE Fae White onions are sweeter. Red onions go better with savoury and spicy dishes, like the Chicken Tikka Masala here.

Methi refers to the dried leaves. Fenugreek is the seeds.
