In most of the Chinese cooking boiling is used which just not only cook the chicken but also add flavour by adding aromatic in the water.

Dean Fearing’s classic tortilla soup recipe from The Mansion in Dallas dates back to the early 90s and was his signature dish. His original recipe started with frying tortillas in the pan before starting the stock. So similar trick but treated differently. Agree a total game changer!

I dug this video and the recipe but I have to say 45 mins in a pressure cooker is insane. Especially since you pre cooked it a bit before. I tried it and it obliterated the chicken. Breast was super dry and everything fell apart in not a great way. Broth was delicious and made it work but definitely gonna half the cook time next time.

If I can offer some genuine constructive criticism, I think you deliver very useful information but the structure of your videos may not be the greatest for an amateur home cook. If it isn’t your intention to provide for that audience, then, all good, but I find it hard to get information out of the video in a quick/efficient manner. Or I’m just an idiot 🤷🏻♀️
