Why do you blanch the chicken before actually cooking it along with the vegetables and aromatics?

That's a standard step any time you want a clear stock or want your dish to turn out white. The blanching dislodges the blood and other impurities and they float on the surface as scum which is washed away. This step does nothing for the taste, it is just for a better looking end result. If you go back and see our momo soup video made with pork bones, we had done something similar.

@@gp9166 It does not since you are only doing this step for a short time of about 5 minutes or so. It is a common practice to make a clear stock of any meat.

guys you really touched my nostalgia of dacre's lane. i had one more also in bakultala bazar basanta cabin. quite similar taste but pure local cabin. in Dubai we got more or less all kind of Bengali food except this one.

This is something my mom used to make when I was a kid, but I couldn't figure out the recipe when she passed away suddenly 5 years back. I miss her a lot and I miss her cooking and the love she used to put into it for me. Thanks to you Bong Eats I get to try it gain and feel her love :)

Then again, that chicken stew was my once or twice a week treat back in those days for Rs. 5/- that included a chicken leg, beans, a piece of carrot, papaya and a potato with a side of toasted bread. What more can you ask for a *foodgasm*? The day ended with tasting various types of chops, esp. mocha r chop from *Kalika* and 'bhaanr e chaa' after classes were over at Presidency. Although I don't live in Calcutta or even in India any more, those are my fond and cherished memories that I keep close to my heart. Without them I am not complete.

You know what your cooking procedure reminded me of? A reunion of childhood friends. See the chicken and the veggies are cooked together in the same pot just the way children grow up together in the same school/ neighborhood/ family. And then they are separated. Finally the broth is prepared and everything comes together. Good. What a symbolic significance of life created through your culinary skills!

Really love the style of your presentation and the neatness. The tips and tricks also work wonders. The camera works, the subtle music - very aesthetic. Just one small hiccup - only if the measurements of the ingredients and spices are shared in units of teaspoons/tablespoons/cups/pieces etc. it would be much easier to follow and recreate.

This recipe, among many from you, is a keeper, surely! Thank you for sharing it. One note in passing for your consideration. I am told the most effective part of the raw papaya that tenderizes is the skin and so kept on to the flesh of the papaya and best not peeled.
