I love the vortex, in my kettle as shown here for high heat, as well as upside down in my WSM hanging meat to feed a crowd requiring shorter cooks (tri tips, sausages, chicken or turkey halves). 70+ guest cook next month, and you bet that vortex will be working there!

I use the Vortex all the time, it's a game changer. The sauce I make is a traditional honey hot, using Frank's and honey that I get from a small farm in Massachusetts, it's aged in bourbon barrels, it's amazing with the Frank's. I also add some granulated garlic powder. Yum!

I don't know how I missed this video but I watched you make these, what looked like delicious wings, and I said I have to make these. I went out to the store today, bought wings and made the bbq sauce and the dipping sauce just like you said. Let me say this...Wing Stop has NOTHING on these wings. The sweet heat with the bbq sauce tossed on these wings is good enough but pair the flavor of the ranch chipotle peppers in adobe sauce and it takes it to a whole new level. If anybody out there reads this comment then let me say that these wings are better than you can imagine...they are that delicious. I will definitely do a video on these and when I do Cooking With Ry I will link your channel and video. AMAZING wings my friend!

I've done these twice this past week. Very good, not spicy enough for my taste, will need to ramp that up a bit. Also, the skin wasn't very crispy. I sprayed olive oil since the duck fat spray is pretty expensive. Not a ranch fan either. I used blue cheese dressing. If I cook for company, I'll definitely make both dips and do two batches of glaze, one like this and one with more heat. Also, this is my first time working with the vortex in my kettle. It hit 500f, exactly for the entire cook, and crept to 525 at the end. Some of the wings that didn't look quite crispy enough, I laid directly over the grate where the hot coals were. My grate isn't open in the center. Thanks for the video.

That Vortex accessory seems like a good accessory to have. I watched your how to use the Vortex video. I like that you have found other ways to use it. In particular putting on a Cast Iron Griddle to get it smoking hot for searing a steak. The dipping sauce using off the shelf ingredients sure gets my vote. Five minutes prep, let refrigerate for a couple hours and done. Get to make what you need. I make a sauce similar to the Outback Bloomin Onion sauce. I do not call it a clone because the flavors are not real close, but similar enough for me. Nice work. Enjoy your videos.

Wings are the main menu item for my little Superbowl party with the guys. I love this recipe, because I almost always do half dry and then half with just BBQ sauce spiked with a little Franks Red Hot Sauce. I can totally relate to you on the heat. I hate eating anything that's overly hot or spicy, I just don't enjoy the experience. A little kick on the back end is perfect! I'll be doing kettle-fried wings myself for the game (even got the same color) and I'm going to try this sauce. Nice cook as always man.

@@CookingWithRy Got a question…I don’t have a vortex for my Weber Kettle. I’ve typically used the charcoal “baskets” that came with the grill as a vortex substitute. Just wondering your thoughts on this, or if you think a vortex makes that much of a difference with the wings and other recipes. Thanks.
