A delicious sandwich or baked potato filling, or piled into lettuce leaves, a perfect appetiser.
Ingredients:
1 tin ( 240g) chick peas, or soak and cook from dried.
1 tablespoon nutritional yeast
1 tablespoon vegan mayonnaise
1 tablespoon nori seaweed flakes or shred a sheet of nori
2 spring onions
2 tablespoons vinegar ( I prefer apple cider vinegar)
zest and juice of 1 lemon
salt and pepper to taste.
