Here's how to make the mid-century Tiki cocktail built to serve two, the Chief Lapu Lapu, which is made with Light Cuban Rum, Dark Jamaican Rum, Passion Fruit Syrup, Simple Syrup, Lemon Juice, Orange Juice and, optionally, Cinnamon Sticks for garnish. It’s similar to the tiki classics, the Cobra’s Fang and the Sidewinder’s Fang. This was more or less the touchstone version from the Golden Age of Tiki, the 1950’s.
Tiki was created by Ernest Raymond Beaumont Gantt (aka Donn Beach) and he set the tone for Tiki culture. The exotic drinks on the menu at Don the Beachcomber were mostly Donn’s original creations and he worked hard to kept the recipes closely guarded secrets, particularly since his drinks were such a key component of his bar’s popularity.
Donn staffed a tight knit crew of Filipino bartenders. So, when competitors were opening their tiki bars and wanted to get ahold of Donn’s famous drinks, they would poach his staff. When they got hired at rival bars, Donn’s ex-bartenders would bring their expertise and Donn’s recipes with them.
It’s not clear who invented this drink, but it started popping up in various forms in the 1950’s. The drink made the rounds and most likely came from a Don the Beachcomber alum who knew his way around an exotic drink and was familiar with the legend of Chief Lapu Lapu. In the 1500’s, on his famous trip around the world, the explorer, Ferdinand Magellan, ran into Lapu Lapu, who refused to bend the knee to the Spanish and in the ensuing fight, Magellan and several of his crew were killed. Lapu Lapu became legendary.
By the 20th century, the Philippines had been under colonial rule for nearly 400 years and there was a long standing Filipino tradition of fighting back against imperial masters. Lapu Lapu served as an inspiration. So it’s fitting that a drink made in an industry with a lot of Filipino influence would be named after a Filipino hero.
Beachbum Berry talks about several versions of Lapu Lapu’s in his book, Beachbum Berry's Remixed. However, this version was the most common in the heyday of Tiki. It has a fairly simple build, as far as tiki drinks go. The ingredients are fairly common and the measurements are all pretty standard (as opposed to six drops of this or a quarter teaspoon of that). The drink is built to serve two and is an extremely easy sipper.
The dry, Light Cuban-style Rum and the funky, Dark Jamaican Rum make for a great, complex balance of complimentary flavors, but if you don’t have both rums on hand, a good, funky blend will also work.
The garnish Beachbum Berry recommends is a big strip of lemon peel. He also suggests to serve it in a brandy snifter, perhaps because the build of the drink is reminiscent of a Cobra’s Fang or, even closer, a Sidewinder’s Fang. One of the Fangs probably served as an inspiration.
However, I like to garnish this one with cinnamon sticks, as a reminder of the spices Magellan died looking for and I like to serve it in a tiki mug with enough room for this larger than average-sized drink. Recipe:
1.5 oz (45ml) Light Rum
1.5 oz (45ml) Dark Jamaican Rum
1 oz (30ml) Passion Fruit Syrup
1 oz (30ml) Simple Syrup
2 oz (60ml) Lemon Juice
3 oz (90ml) Orange Juice
garnish Cinnamon Sticks (optional)
Shake with 12 oz (350ml) of crushed ice and 3-4 ice cubes. Pour unstrained into Tiki Mug or Snifter Glass. Garnish with Cinnamon Sticks. Serve with straw and stir stick. (Serves two).

Great stuff as usual! Made it with a light martinique rum instead of cuban because it's what I had on hand. Any tips on shaking with crushed ice? It's all about getting that balance, right? Not shaking long enough and the citrus and sugar get too concentrated and stick to the back of your throat, too long and it gets watery.

If you really want to get into the weeds on it, measure the amount of crushed ice exactly, shake it for 10-12 secs and keep in mind, the cocktail will dilute in the ice as you drink it.

Haha. Yeah, you're right. A Hurricane is basically a simplified Lapu Lapu or, more accurately, Lapu Lapu is like a complicated Hurricane (as the Hurricane pre-dates the Lapu Lapu by a couple years...as far as I can tell). It's also like a Sidewinders Fang with lemon and the Sidewinder's Fang is a retooling of the Don the Beachcomber classic, the Cobra's Fang which pre-dates them all.

Made this for my wife recently and it's now her favorite tiki drink so far. I've also made it as a blended frozen drink and that was very good as well. Served in hurricane glass with garnish of mint sprig and orange/cherry on a little plastic sword.

1:45 According to the Smuggler's Cove book, Donn put all of his cocktail ingredients into containers only marked with general names and numbers (e.g. "Spices #4) to guard against the industrial espionage: they'd ask the Filipino bartenders in question what went into a given drink and all they could say so many ounces of each otherwise unidentifiable thing.

Discovered this channel 2 weeks ago and have already watched all of the videos featuring tiki drinks. Love the in depth history, not a single channel even compares to the quality in these videos especially regarding tiki. I've even tried your simple Pina Colada recipe following your video at home and loved it. My only question is your preference between homemade passion fruit syrup and the one you feature in this video, which do you prefer? I have heard working with passion fruit can be more than bothersome.

Yeah, I usually am on the DIY syrup train, but because there are some quality, options out there for this one (unlike ginger syrup or raspberry syrup or something), I tend to get the pre-made stuff. The Small Hand Foods version is pretty damn tasty, but if you wanna make your own, just puree some passion fruit then blend it together with equal parts Rich Simple Syrup.

I love your channel and love the true effort you make to introduce the drinks historically! thank you for that :D that being said...I can't get over the way you pronounced Fernão de Magalhães hahaha it's a difficult word to say nonetheless. Important to state that Fernão Mahalhães only went to Carlos V because D. Manuel I refused to give any reward due to Fernão's questionable actions in service to the Portuguese crown.

Thank you!.. As an alternative, try this Lapu Lapu recipe from the Royal Hawaiian in Laguna Beach Ca.. 1 1/2 oz pineapple juice.. 1 1/2 oz orange juice.. 1/2 oz passion fruit syrup.. 2oz white rum.. 1 oz dark rum float..

Distinguished Spirits As a matter of fact.. The recipe calls for passion fruit puree.. I realize most people might not have a Mexican store in their neighborhood but they sell what they call, passion fruit pulp in the frozen food section.. It's a good size, flat block of frozen juice/puree.. I've always used this instead of the Small Hands product.. Small Hands is good though.. I use their Orgeat.. On a side note.. Try this simple recipe from Trader Sam's at the Disneyland Resort.. It's called a Shipwreck.. Muddle 8 or so mint leaves with 1/2 a lemon chopped in 4 pieces in your shaker.. Add 1/4 oz of agave nectar and 2 1/2 oz of whiskey.. Shake and strain over crushed ice.. Garnish with mint sprig..

fantastic video as always! DS have you ever tried/are you ever going to make a michelada? there are so many variations and i'm not sure what recipe to use, but i'd trust you to make the best one!

I've tried it. Tomato juice or other savory cocktails aren't always my favorite. That being said, some friends (mostly my wife) finally made me see the light on the Bloody Mary (kzbin.info/www/bejne/i6mVeqGJhbt8hZI), so, maybe they can get me on board the Michelada train. In the meantime, I'd definitely recommend the book, The Bloody Mary by Brian Bartels (amzn.to/2q3gGbL). It has dozens of savory, tomato juice, salty, cocktails, including a wild Michelada.

Do you think this would work with Flor De Cana 7 in place of the light Cuban rum? I rarely keep light rums on hand.

If you already have it, sure. If you haven't bought it yet, I'd get Banks 5 Island, Plantation 3, Cruzan light, Don Q cristal, Denizen 3, or Angostura 3 if you can't find Caña Brava.

Going to make this next weekend, but am surprised this is marked as "serves 2", the Zombie is slightly more alcoholic and is not really intended to serve 2, am thinking I'll make us one each and we'll drink it slowly like a Zombie or not lol. Will be going through a few of these recipes throughout the summer and will have more time during our vacation.

Yeah, it doesn't seem consistent, huh? Haha. A lot of Tiki drinks are really big, so it's not always clear where the cut off is for a drink that serves one or serves two. Anyway, let me know what you think of it when you try it.

Made this as planned (amongst others too many cocktails too little time) and it was indeed really nice - made a video for my Channel (for showing off to my friends he he). Should have used my Parisien Shaker it was too much content for a Boston shaker and didn’t make a good seal

Meaning, original drinks? If so, the answer is yes. I created a drink that I will be making a video for in a couple months...just waiting on a fun little element of the drink. Can't wait to share it. In the meantime, I have another drink that may qualify. It was not exactly conceived as a Tiki drink, but it fits the mold of rum sour with an exotic sweetener. It's called the Doctor of Journalism (kzbin.info/www/bejne/nZTLlmV3d8Rlq9U) and was inspired by Hunter S. Thompson.

Haha. I thought about that. It often doesn't work very well because it's not sealed all the way around. Plus, it's usually not long enough to get to the bottom. But I'm sure you could get a couple sips out of it if you really wanted to. Cheers!

Simple is 1:1 sugar to water. Rich is 2:1 sugar to water.

Pretty much, yeah. Different rums will give you a different overall flavor, so if you used a Blanc Rhum Agricole and a Demerara for the dark, it will turn out differently than the one in the video, but I bet it would still be great. If you can use the style of rums I used in the video, that's basically how the drink was intended, but feel free to swap them out for what you have on your shelf. You'll still come up with a tasty concoction. Cheers!
