13:16 Here is a tip instead of just freezing after vacum sealing it. Try pouring into ice cube tray or similar. Freeze then vacum seal. Makes for less of a mess for me anyway. I don't it for my Birria, and El Pastor sauces

As a native Texan, I'm so glad to see you enthusiastic about our flavors! The smooth skinned chiles are guijillo and the wrinkle-y ones are ancho. Menudo (3 syllables: meh-new-doh) is a dish of tripe soup, so this is a spice blend intended for that dish. I've never thought about using that. It's brilliant. Now that dried chiles are part of your arsenal, look into making an adobo sauce from scratch (that stuff that comes in canned chipotles). It's so versatile and a base for so many marinades and sauces. My house bbq sauce starts with adobo. I haven't finished the video yet, but this breakfast dish is so much in my wheelhouse. I can't wait to see how many "goll-ees" we get at the end 😁

One way to skim the oil is to take a glass cup or bowl, freeze it, dip it, and peel off the oil. Also, parsley can be a substitute for cilantro. Cilantro tastes like soap to me.

Quick tip: you should rub the Mexican Oregano between your fingers 1st before adding it. It wakes up its oils and flavor. Also, Marjoram would be a substitute if you don't have it.

What is your preferred gas griddle to use in general? I have a cheap 4-burner Blackstone I got from Walmart just to get started since I already have a charcoal grill and pellet smoker. But I find, even when I do everything right with maintenance, it starts to rust on the outside
