Ingredients
For the Burgers (Makes Four 8-ounce Patties)
1 pound ground beef (80-20)
1 pound ground pork
2 tablespoons Siete chorizo seasoning (link in My Amazon Store above)
4 brioche hamburger buns
For the Chile Relleno
4 small poblano chiles
8 oz. Monterrey Jack cheese (2 oz. each chiles)
4 large eggs, separated
1 cup oil for frying
Chipotle Sauce
4 chipotle peppers in adobo
1 cup mayonnaise
1/4 cup sour cream
1 teaspoon minced garlic
1 teaspoon relish
Juice of 1/2 lime
Salt and pepper to taste
Top with Pickled Red Onions and Smashed Avocado (or Guacamole)
