Hello Pailin, I am from Switzerland and I would like to compliment you on your Channel, your recipies and your tips and hacks. As you can imagine obtaining all the ingredients for your recipies is not easy here. Have to buy most of it online. But that aside I have alredy made a lot of your Recipies and I cannot believe how good they are. You are a genius at cooking. But the best thing I have learnt here is how to eat Thai food. Instead of smothering the food in the sauce like westerners do, just put the rice in a bowl and spoon in a little bit of the sauce at a time. Doing it this way I can manage the spiceyness a whole lot better. Yesterday I made Tamarind Shrimp with 2 green and 2 red Thai chilliess and cannot remember ever having a better dinner. Love the gems of wisdom and hacks I learn from this channel! I used to think for a meal to be good I had to make it the traditional way that my mom cooks. While that is all well and good and has its place, it’s very time consuming and sometimes you put in so much effort and it’s not worth all the trouble. I’ve truly learned so many ways to think about cooking with what I have, how to pair certain ingredients and techniques to make a tasty meal and adapt it in all kinds of ways from these videos. Thanks as always for sharing your wisdom, can’t wait to try this with the pork i have in my freezer right now!

this may sound weird but i think this may be myu favourite recipe of yours, it's so simple yet undeniably delicious, and for me the use of chilli flake makes it less thai but universal somehow. Absolutely love it.

My mom somehow managed during the spring time with no refrigerator or freezer. I would love to give you my refrigerator! How frustrating seriously utility issues here but resourcefulness is the best! I woke up early this morning and realized I was very hungry. As luck would have it, I had just about all the ingredients for this, so this was _very_ well-timed! Only thing I didn't have was oyster sauce (I can't find a brand I like here) so I just substituted some more fish sauce.

Fabulous! Everyone who cooks most of their meals needs a roster of recipes for dishes we can whip up quickly just out of the freezer and storecupboard, and yet doesn't compromise on health or taste (because there's no point cooking something the fam won't eat or is bad for them). A perfect easy dish for me! I always have loads of garlic, chicken thighs in freezer, fish sauce & soy sauce. While I always have a cannister of crushed chili (100% Ot Bot), I know how much heat just 1 spoonful can add, so I will add the volume by adding another of my favorite spices called red garlic (dried crushed red jalapeno with roasted garlic) since it is milder. Thanks for this recipe idea. Also, thanks for the idea of rooting Thai Basil -- I am always frustrated by how quick it dries out or goes off before I can use it all.

OMG Pai. I just made this and it’s amazing (of course!) but I had my own “make do” moment when I realized that I didn’t actually have any chicken thighs left in either the fridge or the freezer (whoops). What I did have was… a bag of Costco frozen breaded chicken nuggets. Guess what? Still amazing! I did add a little chicken bouillon powder to the sauce to make up for not having the fond from cooking the chicken and at the suggestion of many commenters here, I opted for gochugaru and it was perfect. Definitely making it the right way next time, but this was a surprisingly great save.

Two weeks with a broken fridge. I thought that condition was reserved for where I live... beyond the outskirts of the boonies. I'm going to try your recipe! It looks like a minimal-fuss affair! BTW... since I have an electric stove, I bought one of those single-burner butane/propane burners. Highly recommended for electric-bound folks. It's the perfect thing for wok-ing. Cheers!

There is a plant based alternative to both, the oyster sauce is also called mushroom stir fry sauce or vegetarian stir fry sauce. Pailin also suggests soy sauce as a fish sauce substitute.

I am all in favour of simple yet delicious dishes! I have quite a lot of gochugaru that needs using up, that should work well for this since it's pretty mild compared to the Thai chilli flakes I can find here 🤔

Try _Lakanto Classic_ - it's a monk fruit + erythritol sweetener that has _net _*_zero_*_ carbs_ due to the natural sugar alcohol. It has a neutral/sweet taste. I use ~⅔ to ~½ as much as called for in your recipe.

Yesterday I cooked chicken with almost similar ingredients. There was chicken leftover in my fridge that already marinated with pre-made spice mix, and I cut it into bite size. I coated the chicken with some corn starch, so it was like chicken popcorn. For the "sauce", I used just garlic and a handful of bird's eye chili and ginger. I chop them finely and stir fry. I added fish sauce, sugar, and oyster sauce, but I didn't add water. The sugar caramelized perfectly so the sauce stick to the chicken, but it wasn't sweet at all. I added lime juice to balance the flavor 😋

You can keep the oyster sauce outside only if your kitchen is air-circulated and not easy to make things moldy. And close it tight.
