Mauritian chilli paste is a condiment made from fresh chillies, puréed and blended with oil. It is used sparingly in Chinese and Indian dishes.

Ingredients:
100g red chillies
3 garlic cloves
1/2 lime
1/2 TSP Salt
1 TSP Sugar
1/4 Cup Oil
100g piment vert
1/4 Apple
3 Garlic cloves
1/2 TSP Salt
1 TSP Sugar
1/4 Cup Oil
Rinse and dry with a towel
Remove all the stalks from the chilli
Smash and peel off the garlic clove
Put everything in the grinder
Then add oil - oil will help to preserve for longer time
Process until smooth paste is obtain.
Transfer to a clean jar. Then add oil on the top.
Do not use wet spoon while removing chilli. Moisture will spoil the chilli paste and form fungus ion the surface layer.
