Mandy, This is not a criticism just an observation. As an experienced cook you know a Pyrex jug is an approximate weight, they can be up to 75ml out either way, you have kitchen weighing scales, put any jug on weighing scales set to zero and add liquid for a true correct measurement, a much better accurate result. I don't know if you have received your recent energy bill but to cook something in an oven for two and a half hours is astronomical cost, you have a Cosori Pressure cooker....would it not have been economical to demonstrate in this for quarter of the cost to your viewers..

Hi Mandy this is a lovely recipe I will certainly be making it, you say your beef cheeks are economical I wish they were here where I live in Perthshire Scotland in November last year I paid £14.00 for two they were large and delicious but not what I would say economical. Tasty! Id use my bench top slow cook function, because running the oven for that long is too expensive here. Of course you wouldn't get the sauce reduction but ...

I like Chinese braising,also known as red cooked,I don’t reduce mine that much as it becomes much to salty for me,I also like to add star anise,and a cinnamon stick,and a bunch of scallions to the braise. A pork butt(shoulder) is a good meat to braise ,the Chinese keep the liquid,and add to it each time they use it,they say you can cook all meats in it just adds to the wonderful flavor,but no fish.I freeze my leftover liquid,as I am a bit afraid to just refrigerate it,and use it. You may know this,but in case you don’t,you can shred those King mushrooms,and use like noodles,I saw that on Young Man Cooking,love his mainly Chinese food channel.😊

It sounds like it might be a slow cooker recipe, but you don’t get the evaporation in the slow cooker, so maybe it will affect the stickiness of the glaze. Have you ever cooked it in a slow cooker Amanda? It would be cheaper, but no good if it affects the integrity of the dish xxx

I love broccoli ❤. It goes really well with beef I think. To be honest I like most veg.
