They don't serve 2 people in a day but 2000. If they focus on hygiene they won't survive in the bussiness. And their customers are from different background, they don't care about hygiene but cheap and tasty food. P.s:- they clean their stalls two times a day. But the amount of people they serve and the speed at which they have to cook makes it look like it's very dirty.
