One big difference is you don't have to worry about eating something that you arent supposed to eat in Taiwan. Sometimes in China you think you know what you are eating but you don't.

I think Prozzie is right that Taiwanese cuisine is more about the texture of the food, especially having the right texture (口感) of the ingredients in different dishes. But there‘s also something else quintessential to Taiwaneses cuisine-the Umami 鮮味, referring to the original flavour of the ingredients食材. That’s why the quality and freshness of ingredients are so important to Taiwanese cooking. For example, one of my favourite dishes 白斬雞(poached chicken), perfectly embodies the combination of 口感&鮮味. The chicken needs to be of top quality and cooked to perfection. The sauce on the side is just to give a kick to your palate but not to overpower it. The idea is to celebrate the deliciousness of chicken itself. I did received comments from Chinese friends I met here in the UK that my cooking is a bit too bland (清淡), believing that I am a decent cook, I take this as a reflection of our differing palates rather than my lack of skill. I think it’s an acquired taste and I have notice that not everyone (especially from China ) appreciates it -which is understandable.
I am proud of Taichung, My old home town, I grew up there, left there 50 years ago, btw, my father is one of the person who helped established the University of 逢甲。 omg, I miss the old home town.

Can someone help me identify a food? It was a cold pork belly slice with chives and a brown plum sauce on a flat toasted bread that was filled with sesame seeds. I had it at the Taiwanese restaurant in my town but they shut down during covid and I have never seen it anywhere else..
To be honest I enjoyed your previous video better. It had more spice and I enjoyed the chemistry that you two had on camera. This video was as bland as the food 😂 PS Miss Zou is a fantastic guest!
