I like how he says it takes five minutes then 15 seconds later he says cover and let sit for 30 minutes. That’s when I stop watching.

5 minutes turned into 30 minutes in the bowl and then 10 minutes of browning and another 10 minutes of cook time in the sauce for 50 minutes of tenderizing. People have to do better with these titles. The recipe looks tasty and all and I know the technique works to tenderize, but it is definitely not 5 minutes!

From what I’ve heard… the baking soda is what makes it so tender. I’ve seen recipes for pork that tell you to soak the pork in a bowl of water with baking soda to tenderize it.

It’s called “velveting” and most Asian cultures have been using this method for centuries. Works with most meats and fowl. Be sure to thoroughly rinse, and DON’T leave it longer! It’s partially “digests” the meat. Hope this helps!

The secret to tenerizing any meat that wants to be tenerized is the vinegar. I slow cook pork butt with a vinegar based BBQ flavoring liquid for pulled pork sandwiches. It falls apart. Brisket marinade has vinegar in it.

there is only ONE form of meat tenderiser and that is PAW-PAW fruit ... slice and lay on meat while cooking when turning turn meat and then replace paw-paw on top till meat is cooked .... do one piece with and one without and see the difference
