I was very excited about this recipe at first glance, as I have a huge amount of Okinawan spinach growing in my Victory Garden. However, I’m not interested in using salted eggs - let’s just say: edema. 🙁👀😵💫 Can you possibly come up with a recipe for Okinawan spinach? It’s an AMAZING VEGETABLE, and so easy to grow!! A perennial in some areas, too!!

It's uncommon to see spinach or anything that's a leaf pulled up by the roots in American grocery stores. I do this with spinach and (I cannot type this in Chinese but sonchus oleraceus which has many Chinese names and tastes like spinach when cooked) and when I go to Asian markets in the USA that sell vegetables with the roots I always plant a few of the roots. Right now I have cilantro but not the American kind but the Asian one that's more bitter from a bundle of roots and leaves

Huevo salado y huevo de siglo ambos son huevos preservados. Tiene que comprarlos en las tiendas asiaticas o chinas.
