That's probably a bain maire, it has hot water in it and it stores utensils that are being used that day. They all get emptied and washed at the end of the day.

That brand in particular is very recognizable (I don't even remember what it's called. Every grocery store around here has that brand and a generic, so that's just what worcestershire sauce is to me). But I'd guess that it's not the case in every country.

We have allergies to all nuts with the exception of almonds. I’d like to try this with almonds instead. It looks yummy.

You may have to roast the almonds and use a food processor to make almond butter first. Peanuts are much softer than almonds, so they can be put right into the blender. It wouldn't work the same with almonds.

That's for the utensils used while cooking. It's called a bain marie. They all get washed after he's done cooking.

True or false.?. Tomatillos release bitter flavors when they burst in boiling water.?. I ask because you cut them in half.

After having cooked tomatillos for years and asking myself that question i can tell you that i don't really know. Really it depends more on the quality of the tomatillos you're buying, there's this Mexican chef that did the experiment boiling tomatillos before they burst and long after bursting and the only real difference was that the burst ones resulted in a thicker sauce, which makes sense since after cooking them you usually blend them and further cook them in a salsa. I would advice to still not let them burst, but no reason to be so meticulous about it
