actually, there is no nutritional value increase from letting a banana ripen or get brown spots. The only thing you are doing is letting the sugar in the banana increase hence the reason why it is sweeter. it is digested easier but a greener banana has more resistant starch which acts like fiber and also feeds the good bacteria in your body. But I learned recently, that to retard ripening too soon, one should put them in the frig. This works. I had a bunch of 5 bananas in the frig, but forgot about them.
