I danced the '80s away at night and perfected making chocolate from scratch during the day. Which I then experimented with perfecting the most decadent treats, desserts truffles for our feast and even developed an over the top dark chocolate therapeutic body treatment. It was definitely a decadent decade of dancing, going to the gym, the clothing, everything was decadent and to the excess. Prince and Madonna made wearing underwear as outerwear, lux fabric and excessive jewelry. Hair! Yes, Sex, Drugs, Rock n Roll Dancing & Super Dark Chocolate regenerating our skin. Yes Chef John, I'd say we all did all EnJoy it and had Fun. Thanks again for these very entertaining and informative cooking demonstrations. Love the way you play with words . ✌💞🇨🇦 KEH

In order to make my chocolate dishes more chocolatey I add some instant espresso powder. Not so much that it tastes like coffee but it really bumps up the chocolate flavor. I learned that it had to be instant espresso powder or else there would be bitter coffee ground in the food an the dish would be ruined. Love your channel. Can't wait to see more!

I did this with the sauce for my father's 60 years birthday. It was planned 2h before the dinner on the parking lot at the store. Remembered this video from the chocolate compilation. Pjuh! Used 400g 40% chocolate and 100g 70%. Still very heavy and some extra sugar since they were not sweet. The raspberries were frozen expect the ones for presentation. The frozen ones tasted ofc great but wanted it thicker. If possible thaw them in advance or maybe add some gelatin. The lemon packed a punch. Beware. Sliced the cake in to 16 pieces. Perfect amount! Very heavy. Went with 14min. 12 is best, outer edge was softly dried. Will make again!

Reminds me of a birthday card I got once that said, “I tried a dessert called Death by Chocolate... But it only made me stronger.” This dish could be nicknamed Death by Chocolate, in my opinion. I had it once (a different once than the one with the card) and I remember bright beams of light accompanied by a feeling of insurmountable bliss. So I skootched my chair to evade the glint of windshields in the parking lot. And as for the sea of bliss upon my dessert plate, well, as you can guess, I survived, single-forkedly and so much stronger than before. Cheers! -Phill, Las Vegas

But why do you always add a pinch of salt to a completely sweet cake dish like this? I never got that :) What does the salt do... ?
@AWS1379 жыл бұрын
Salt brings out the flavour in everything. It makes chocolate more chocolatey; just like how steak and potatoes become more flavourful with enough salt.

Karti Loco Like Andrew Ng said. It is only a pinch and it will enhance the depth of all the other flavors. (And feel free to use the cinnamon with the chocolat because it is awesome!) :)

I ended up making this cake along with the raspberry sauce for my moms birthday today and she really loved it! She couldn't stop talking about how delicious it all was! The cake is pretty easy to make, but thank goodness I have a KitchenAid with the whisk attachment. It made the process much better. Also, I ended up using a 9 inch bundt cake pan because I couldn't find any regular flat and round ones, but it ended up taking 20 minutes in my oven. It's great to have a substitute, but it sucks when you finally have to take it out of the pan. I let it sit in hot water for a few minutes, but I had to keep going around the edges with a knife and I was so glad when it finally came out. The cake still came out just as expected and I'm definitely glad I tried it out. Thank you so much for sharing another one of your recipes! :) I guess I definitely did get llll.....lots of compliments! XD

I’m making this today for the 4th year in a row. It behaved a little differently this year. When I combined the chocolate and egg mixtures together it was pretty greasy and clumpy. I wonder if I didn’t let the butter and chocolate incorporate well enough. Well. I think I fixed it by running the hand mixer through it for 10 or 20 seconds. Everything smoothed out. It’s in the oven now, we’ll see how it comes out!

I've heard you can use cocoa powder on the baking pan instead of flour to make sure there isn't any white residue when you take the cake out - is that just what people who care too much do or is it a valid option?
@ChuckDoesntSleep9 жыл бұрын
I did the cocoa thing recently on a layer cake that only had icing on the top and in between layers....and it looked better because the cake was actually showing all around the sides. Cocoa does work to keep your cake from sticking though...although I used solid shortening and not butter with the cocoa.
@Nematichan9 жыл бұрын
There shouldn't be any visible flour left if you do it right (A layer of flour doesn't just look bad, it tastes awful too). Use a piece of paper towel to butter the pan evenly, add some flour and roll it around covering the whole surface. Then forcefully tap the pan several times upside down (above the sink) to remove all excess flour (and I mean slam it hard). This way you shouldn't have any visible white leftovers after baking. (Make sure the corners / creases are buttered, but no big pieces of butter are left.) I myself have never used cocoa for this, but my way also works for non-chocolate cakes. Good luck!

They're pretty subtle (and overpowered by the chocolate). After having it at a few places, I only found out it had almonds when I asked about allergens. And then I put it into my own recipe and still couldn't really tell.

Yeah, I guess the almonds would be overwhelmed....didn't think about how small the amount of flour actually is :) But sounds like it would make a fine substitution for flour in a lot of recipes that include chocolate.
