Hello my wonderful, amazing friendos!
Many of you have requested that I try making chocolate eclairs for a video. And today is national chocolate eclair day, so it was perfect timing for me to put this video together for you guys! I also have some vegan butter cookies from Whole Foods to eat with them! I really hope you enjoy as much as I did!

Chocolate Eclair Recipe:
-Vegan Puff Pastry (I used Pepperidge Farms)
Chocolate Filling:
-4 Cups Powdered Sugar
-1/2 Cup Cocoa Powder
-Pinch of Salt
-1/2 Cup Softened Vegan Butter
-1-2 Cups Almond Milk
Chocolate Glaze:
-2 Tbsp Melted Vegan Butter
-2 Tbsp Cocoa Powder
-1-2 Tbsp Almond Milk
-1/2 Tsp Vanilla
-1-1/2 Cups Powdered Sugar
Cut puff pastry into eclair sized strips. Place on parchment lined tray and bake according to package.
Mix together filling ingredients and set aside.
Separately mix together glaze ingredients and also set aside
Once eclairs are done, allow to cool completely. Poke a hole in either side of the eclairs and fill with filling using a piping bag.
Dip in glaze (if glaze gets too thick, just add a little more vanilla or almond milk). Allow to set and enjoy!
