Hi Leslie when you're on a diet I don't think it hurts to treat yourself maybe once a week you know this is so difficult to do how well I know my problem is if I keep one cooking stop but see I keep going on and eating about five or six but I like to eat have a good day now

This was one of my mother's favorite desserts. She used to make this often, but she used vanilla wafers instead of graham crackers. She had used the vanilla wafers one time when she didn't have graham crackers and liked it better. Of course she made her own chocolate frosting! Brings back memories.

I received the recipe For eclair pie From the host of my engagement party decades (gulp!) ago. The crust was a "secret family recipe", which I later learned was actually a choux paste. Anytime I have served this, there has never been any leftovers for us to bring home for ourselves! We have a pot luck this coming Sunday at church after service, and I am definitely going to bring your version Leslie. I thought this would be an easy dessert to fix for tonight. I had everything except the Graham crackers. I went to two different stores and could only find one box of cinnamon graham crackers. I grabbed them and a box of vanilla wafers! I made half the recipe and made a small chocolate pudding one using the cinnamon grahams and now I'm going to make the vanilla one using vanilla wafers!

Before I retired, I had 10 women that worked for me. I always made each on a birthday cake. I gave them a choice between the Eclair cake, and a pick pickin’ cake. They always chose this one! I was fine with that because it’s so easy to make! You can use sugar free pudding and sugar free whipped topping to cut down on the sugar. There is also low fat graham crackers to make it a little lighter. Now my family always asked for this cake for most occasions too!

Love eclair cakes .. so easy ! You can also do with Banana pudding and cut a few bananas on each layer ! And I wonder if you could do as you did but add some marshmallow crepe in with the pudding and cool whip !! Sounds great also !! All the cakes looked delicious !!

This looks delicious! I'm not a fan of Graham crackers so I might try vanilla wafers instead. As someone else suggested, maybe try banana instant pudding. But that chocolate frosting "trick" looks amazing! Definitely keeping that in the recipe.

Hi Leslie! This recipe is okay, but I like mine better. I make the eclair dough and bake it, and I add cream cheese to the pudding and top it with the cool whip and then homemade chocolate syrup! I've got one sitting in my frig as we speak. It's all good, everyone has their preferences. PS Caroline, I love the hair! It looks great on you! 😃

I have seen variations of this recipe and they all look fabulous. I improvised a pie similar to this. I made an easy graham cracker crust ( crumbs and butter), vanilla pudding, Oreo crumbs, chocolate pudding and whipped topping. It was a big hit as some prefer vanilla, other’s chocolate and this gives us both.

This is one of my favorite desserts! If you want to trim graham crackers to fit perfectly, use a serrated knife on a cutting board. Saw it gently and you'll get great results.

Happy birthday Levi🎉 I love eclair cake , but I once saw a recipe that did not have Graham in. Seemed more eclair with pastry instead of Graham, but cannot find it anywhere I search... Maybe you have an idea 💡 I think maybe could just bake off some sheets of puff pastry?
