Can't wait for the stacking video. I hope you can share with us too delivery and transport. Was it a wedding cake? Looks like ganache dries so fast meaning you have to be quick. Sorry for writing alot of comments. 😢

No worries at all, I am loving the questions! The stacking video will be up soonest. Actually what I love anbout ganache is its flexibility. If it gets too hard (due to the cold) take out 2 tablespoons, microwave and add it back into the rest and re-whip. You can also add in some unwhipped cream to soften it up. I specifically made this one to be on the drier side since it was travelling and would be on display during the ruracio ceremony, so it needed more stability.

The whippung cream should be non-dairy, right? So Puratos, Ambiante, Pristine is what we're speaking of? And the higher the fat content, the better, right?

Yes, non dairy cream is better since its more stable. Dairy might end up splitting during the whipping so its better to use it for non-whipped ganache.
