For anyone needing the metric conversions: Chocolate Mud 80 g packed brown sugar (1/3 cup) 80 g maple syrup (1/4 cup) 27 g coconut/vegetable oil (2 tablespoons) 1/2 teaspoon vanilla extract 3/4 teaspoon kosher salt (or 1/2 teaspoon fine salt) pinch of cayenne 22 g unsweetened cocoa (3 tablespoons, Dutch-processed if possible) Granola 205 g rolled oats (2 cups) 100 g chopped almonds (3/4 cup)

Also, he legit wasn't joking when he said you'd want to eat it all yourself! My partner and I have gone through 2 batches in less than two weeks, eating 50g with yogurt every morning. I'm not sure I'll eat any other kind!

I've got a similar recipe but I only use 1 tbsp honey and 2 tbsp sugar for 200g rolled oats - it's still a bit sweet but so much healthier. ;) To make regular crunchy cereal, simply replace the cocoa with regular flour and add e.g. cashew nuts before baking and raisins+coconut chips after baking.

This looks absolutely delicious, and a fantastic Mother's Day gift. I'm going to give a version of this a go without nuts, and likely the chunkier, slightly chewier version of the bake.

Tried it myself today and it turned out wonderful! I just used beet syrup as a substitute for the maple syrup as my grocery store didn't have any, mixing was a bit harder but turned out great anyway.

I just made this granola and it's really delicious! I might add some dried fruit or something sourish to cut through the smooth chocolate. It's very easy and comes together quickly! Baked mine for 45mins total and it's really crunchy.

Dutch processed is great and tastes so much better, though iirc the dutching process does get rid of most of what gives the chocolate health benefits.

Thanks for sharing this! Literally the best granola ever! I love granola and I use true elements dark chocolate granola for my breakfast. Its the best! You should also try them.

I made this yesterday. I made a half portion, and I used walnuts instead of almonds cause that’s what I had on hand. It was great, I served it over yogurt that I mixed with peanut butter for a peanut butter chocolate flavor.

To all those commenting (freaking out) about the sugar he dumps in the bowl after saying "no added sugar", please consider... He said: "In fact, we are probably making it MORE nutritious since we are gonna be getting all those well-documented health benefits of chocolate without having to add any ADDITIONAL sugar" I BELIEVE what he meant is that once the granola is made, you won't need to add any additional sweetener to it in order to make it taste appealing. Some sweetener is necessary to offset the bitterness of the chocolate when making it, but the amount is minimal.

Also, the sugar breakdown could be as follows. According to his blog, the recipe makes approximately 3.5 cups of granola. For the sake of discussion, let's say a serving size is 1/2 cup, which would give you 7 servings total. The total amount of sugar called for is 1/3 cup. There are 13.5 teaspoons in 1/3 cup divided by 7 total servings and you're left with about 2 teaspoons of sugar per serving. Even less for the maple syrup (1/4 cup for total recipe = 10.14 tsp divided by 7 servings = 1.45 tsp). Together, total sugar is approximately 3.44 tsp or a generous tbsp. I hope this is right cuz I'm high as fuck.

Question, how do you feel about toasted the nuts and oats before mixing or baking? Any thoughts on flavor or texture doing this method?

Light a candle, turn off all the lights. Midnight sharp, not a minute more or less, look into a mirror and say "Cayenne" three times. Chef John will appear and swear to make your foodwish. Next time. Maybe.

You should try this recipe again using coconut sugar. It has a glycemic index of 35, putting it in the low category, and meaning it doesn't spike your blood sugar level. Coconut sugar also helps stabilize your blood sugar and it contains quite a few different nutrients in small amounts (but any is better than none right?) It tastes a little like brown sugar with a hint of caramel. But to me it's just a touch milder flavored than brown sugar, so you could replace some of the white with extra coconut sugar without it overpowering the other flavors.

Weird addition Citrus peal. This is done after the step at 3:30 just zest it like you are making a cocktail. It is fantastic but it will make it taste a lot like whatever fruit you use so be warned.

You need to do a chicken fried steak video! I had to use another channels recipe and it was very disappointing! My husband asked why I didn't use a "Chef John" recipe for it.. And I had to tell him that there wasn't one! Stop and take a break.. So you have time to make chicken fried steak!!

I think that the proportions on the blogspot are wrong. No one outside USA is using cups so i just used a mug and used the same proportions, yet it didn't come out the same at all. Also it was very, very sweet. Any advice as to what i might have done wrong?

The lowest temperature my oven is capable of is ~300 F., how should I adjust cooking time? Is it even possible?

Not sure if you can adjust the cooking time; that would be my second option (you would have to really watch and stir a lot). My first option would be to use someone else's oven. 🙂

So were I live, maple syrup is either too expensive or hard to find (we can only get that suspicious thing called pancake syrup). Is there anything I can do to substitute for the moisture? An egg or something?
